Homemade Pasta at The Happy Housewife

If I knew how easy it was to make my own pasta I would have been making it for years. Not only is it easy, it is cheaper and healthier! I have posted a very basic recipe and tutorial below. I plan to add more complicated recipes as I experiment more.

Homemade Egg Pasta

Author: Toni Anderson

Ingredients

  • 3 eggs
  • 2 1/2 cups flour

Instructions

  • Crack 3 eggs into a bowl and gently beat the eggs.
  • Add two cups of flour. Mix in the flour until dough sticks together. Add more flour or a small amount of water until the dough forms a ball.
  • Take the dough out of the bowl and knead by hand until dough forms a soft ball.
  • Wrap dough in plastic wrap and let rest for 20 minutes.
  • After 20 minutes, roll out dough on a lightly floured surface. Do not roll the dough wider than the pasta machine.
  • Lightly dust the pasta machine with flour to season the machine.
  • Feed the dough into the pasta machine, turning the handle with one hand and holding the dough with the other.
  • Twist the pasta into small nests and place on parchment paper that has been lightly dusted with flour.
  • Cook pasta in boiling water for 6-8 minutes and then drain.
  • Toss with your favorite sauce like this Asiago cream sauce!

Notes

If you do not have a pasta machine, roll the dough to a 1/8 inch thickness. Use a pizza cutter to cut the desired width of pasta.

we love making pasta! it’s fun to do with friends that we have over. they’re always so amazed. i don’t know if we’d do it with a manual pasta machine. the good ol’ kitchen aid makes it even easier.

I haven’t made pasta in years. I should get out the machine and try it again. Your pasta dish looks so good.

I was so excited after I made it, and my family said it tasted better than their favorite Italian restaurant!

I am going to make it this week. I already have all of the ingredients, plus a can of artichoke hearts. Thanks for the yummy post.

My pasta machine is not red. *sniff* Things taste better when they are made in/with red equipment. lol

That looks so good! I made homemade noodles (more like dumplings) once a year for Christmas and it reminds me of those. I do not have any more room in my kitchen for one more gadget though! But I really want to try homemade pasta now. Thanks for making it look so easy.

So-how do you clean the machine? This is something I have never been able to get a good answer to even with internet searches.

Ours came with a little brush. We just brush it out when we’re done.

Yes, I cleaned mine with a pastry brush. It cleaned up nice.

Homemade pasta always brings the love…and compliments. I like a hand cranked pasta machine better than motor driven.

I have always been intimidated by making my own pasta but would love to try it. My favorite dish is Linguine with Clam Sauce.

Looks delicious but I don’t have the dough attachment on mixer and don’t have the pasta machine. I better add these items to my wish list! And I second Leah, my all time favorite meal is Linguine with Clam Sauce. YUM

You can always use a pizza cutter to make fettuccine noodles or lasagna, you don’t have to have a machine, although it does help!

My favorite dish is a seafood scampi – shrimp, clams, mussels, scallops in a light garlic, lemon and wine sauce. Homemade pasta does look fairly simple.

I tried making pasta once, but (without a machine), it came out more like thin, wet bread. Have you ever experienced “real” pasta texture w/o a machine? I’d love to try this with freshly ground flour for the nutrition!

Homemade pasta…next on the list. I’ll probably try it with ww flour so hopefully it’ll turn out well. I like the eggs added to it.

I have made pasta for years without a machine. (Although, I do have one now.) All you really need is a rolling pin and pizza cutter. Roll the dough as thin as you would like it and then cut with the pizza cutter.

I would love to win this! I have wanted to try making my own pasta for a long time! I love all pasta, but my favorite is linguine with shrimp in a white wine, garlic, hot chili, cream sauce- SO yummy!

I don’t think pasta has ever looked that amazing before – yum! I’ve seen recipes that use only water and flour, although I’ve never tried them. I wonder how this compares. I guess I’ll have to get around to trying both! Once I finish up the pasta in my pantry, that is…

I made some pasta this past weekend, but had trouble when I put it through the part that cuts. It kept getting bunched up and not wanting to come out. Eventually I gave up on cutting it and filled it with cheesy stuff instead. Any ideas what I could do next time though to make it work better?

i had the same problem when i first tryed it. i usually have to let it sit for a few minutes after rolling it out. it needs to dry just slightly before putting it through the cutter.

Maybe you need to add more flour to the dough? I would try that or letting it sit for a few minutes. I made some spinach pasta this weekend and it was stickier than normal. I kind of helped it out of the machine and then wrapped it before I put it on the parchment paper.

I got it for free from freecycle.org – you guys should look into it 🙂
