If I knew how easy it was to make my own pasta I would have been making it for years. Not only is it easy, it is cheaper and healthier! I have posted a very basic recipe and tutorial below. I plan to add more complicated recipes as I experiment more.
Homemade Egg Pasta
Ingredients
- 3 eggs
- 2 1/2 cups flour
Instructions
- Crack 3 eggs into a bowl and gently beat the eggs.
- Add two cups of flour. Mix in the flour until dough sticks together. Add more flour or a small amount of water until the dough forms a ball.
- Take the dough out of the bowl and knead by hand until dough forms a soft ball.
- Wrap dough in plastic wrap and let rest for 20 minutes.
- After 20 minutes, roll out dough on a lightly floured surface. Do not roll the dough wider than the pasta machine.
- Lightly dust the pasta machine with flour to season the machine.
- Feed the dough into the pasta machine, turning the handle with one hand and holding the dough with the other.
- Twist the pasta into small nests and place on parchment paper that has been lightly dusted with flour.
- Cook pasta in boiling water for 6-8 minutes and then drain.
- Toss with your favorite sauce like this Asiago cream sauce!
Notes
If you do not have a pasta machine, roll the dough to a 1/8 inch thickness. Use a pizza cutter to cut the desired width of pasta.

we love making pasta! it’s fun to do with friends that we have over. they’re always so amazed. i don’t know if we’d do it with a manual pasta machine. the good ol’ kitchen aid makes it even easier.

You can always use a pizza cutter to make fettuccine noodles or lasagna, you don’t have to have a machine, although it does help!

I tried making pasta once, but (without a machine), it came out more like thin, wet bread. Have you ever experienced “real” pasta texture w/o a machine? I’d love to try this with freshly ground flour for the nutrition!

I have made pasta for years without a machine. (Although, I do have one now.) All you really need is a rolling pin and pizza cutter. Roll the dough as thin as you would like it and then cut with the pizza cutter.

I made some pasta this past weekend, but had trouble when I put it through the part that cuts. It kept getting bunched up and not wanting to come out. Eventually I gave up on cutting it and filled it with cheesy stuff instead. Any ideas what I could do next time though to make it work better?

i had the same problem when i first tryed it. i usually have to let it sit for a few minutes after rolling it out. it needs to dry just slightly before putting it through the cutter.

Maybe you need to add more flour to the dough? I would try that or letting it sit for a few minutes. I made some spinach pasta this weekend and it was stickier than normal. I kind of helped it out of the machine and then wrapped it before I put it on the parchment paper.

I have an electice pasta machine. I put the ingredients into the bowl, put the lid on, it mixes, rises, kneads, and then i choose the disc and it feeds it and cuts it for me…. super easy and yummy!
