Recently I have started mixing my pancakes and waffles in the blender. I am not sure if this will work in all blenders, but it works great in my Vita-Mix.
I am able to pour the batter right from the blender to the skillet. My batter is lump free and clean up is a breeze. I blend the dry ingredients and then add the wet ingredients. You could probably reverse the order too.
Whole Wheat Waffles
Ingredients
- 3 cups whole-wheat flour
- 1 teaspoon salt
- 1 tablespoon baking powder
- ½ cup oil
- ¼ cup agave
- 4 eggs
- 3 cups buttermilk
- Serve with syrup fruit, whipped topping etc.
Instructions
- Combine all dry ingredients.
- Blend in all the liquid ingredients.
- Pour straight from blender onto waffle maker.
Notes
For those of you who mill their own wheat, we find that Kamut makes some of the best waffles we have ever tasted.

I have a hand held mixer so thing get blended nicely. I use a soup laddle to pour my batter.

Correct me if I’m wrong, but isn’t pancake batter SUPPOSED to be lumpy? (I’m not the best cook, so I don’t know). That is just what I’ve always thought. Also… I have wanted a Vita-Mix for a LONG time! I’m totally jealous!

Yes, I there should be a few lumps but not so lumpy that you are biting into flour when you eat your pancake. The vita mix blends to a perfect consistency.

Agave is a syrup from the agave plant. It is supposed to be a healthier alternative to sugar, but of course people still debate that. You can substitute with white sugar. 🙂

I believe it makes about 20 waffles, but the kids always eat them as they are coming off the waffle maker so I am not sure. I usually double the recipe.

Have you tried it with skim or 2% milk instead of buttermilk? I never buy buttermilk, so I don’t know if it comes in different percents…

I turn my milk into buttermilk by adding a bit of lemon juice or vinegar.

How much lemon juice or vinegar do you add to the regular milk? I never buy buttermilk either, and usually just use regular milk by itself when it’s called for in a recipe. I’ve heard of using vinegar, but have never known how much to use.

I would substitute fresh local honey, that’s been properly extracted with no heat. Agave production isn’t always the most healthy, some processors use high heat, which creates the same issues as high fructous corn syrup (HMF) that can spike your blood sugar. If you do go with sugar, remember, you’ll need to up the moisture somehow.
