Menu Plan: Low Cost Meals

I’m re-evaluating our grocery budget this month and trying to find ways to save on some meals so we can spend a little more on “real” food. The recipes in this week’s menu plan are great for those weeks you need to stretch the paycheck!

Breakfast

Whole Wheat Oatmeal Pancakes

served with fruit

English Muffins

served with eggs

Whole Wheat Lemon Poppy Seed Muffins

served with fruit

Granola

served with yogurt

The Lunch List

  • Sandwiches
  • Quesadillas
  • Grilled cheese

  • Fruit and veggies
  • Baked Potato
  • Sweet Potato

Dinner

Spaghetti Pie (less than $.50 a serving)

served with salad

Shepherd’s Pie (less than $1 per serving)

served with salad

Nacho Bake ($6 meal – serves 6)

served with fresh veggies

Oven Fried Chicken ($6 meal – serves 6)

served with green beans, rice, whole wheat rolls

    Is the salad part of your $1 budget? If so, are you using anything besides iceberg lettuce? We love salad here and eat it several nights a week but it definitely isn’t cheap so I’m just wondering what your tips are for fitting that into the budget. Thanks!

    I love how creative your lunch list is! I always find myself getting into the same old rut of turkey or PB&J on whole wheat. Luckily, my Kindergartner doesn’t seem to mind, but my husband does, LOL!
