Grilling pizza is my favorite way to make pizza! It tastes just like coal fired pizza even on a gas grill. There are some secrets to making perfect grilled pizza so make sure you read my tips before attempting it yourself.
Years ago, when I burned our dinner to a crisp on the grill, part of the problem was lack of good instructions. I hope this post will help anyone who is willing to attempt pizza on the grill.
Grilled Pizza Crust
Ingredients
- 1 packet or 1 Tablespoon yeast
- 1 1/2 cups warm water
- 1-2 Tablespoons refined sugar
- 1 teaspoon salt
- 1 teaspoon crushed garlic
- 1 teaspoon Italian seasoning
- 3 Tablespoons olive oil
- 3-4 cups all-purpose flour
Instructions
- Allow yeast to proof in warm water for about 5 minutes. Mix in the rest of the ingredients adding the flour last. Knead for about 5 minutes.
- Turn grill on high.
- Roll the dough out on a floured surface.
- Turn your grill down to a medium heat. Brush pizza dough with olive oil and lay on grill. Close the lid. Grill for about 3 minutes.
- When the first side is finished, brush the top side with olive oil and flip.
- Cook for another 3 minutes. Remove pizza from the grill. Top with your favorite toppings.
- Turn the grill on low and place back on the grill until the toppings have melted.
- Remove from the grill, cut and serve.
Rolling the Dough
Grilled Pizza Tip #1:
Make smaller pizzas. This recipe made 6 small pizzas. Large pizzas are very difficult to flip on the grill.
Grilled Pizza Tip #2:
Stand next to the grill, as soon as the pizza smells done, it is time to flip.
This pizza is way to big. It was before I figured out the smaller is better tip.
Grilled Pizza Tip #3:
Don’t overload your pizza. Too many toppings will cause your pizza to “sink” into the grates of the grill.
If you LOVE toppings consider adding them at the very end of the grilling process and let them heat up during the last 2 minutes of grilling.
Grilled Pizza Tip #4:
Stand by the grill while you are grilling the pizza. The pizza cooks very quickly. If you get distracted for a few minutes your pizza will probably burn.
Grilled Pizza Tip #5:
Enjoy your pizza outside. Less mess and no sweeping up after dinner.

Tip for grilled pizza…shape the dough into the desired crust size and freeze for 10 minutes. You can then just pick up the crust with your hands and put it on the grill. This also prevents it from falling through the grates. Since the crust is so thin, freezing it doesn’t prevent it from cooking.

Another tip you might use next time is to put tin foil on the grates before you put the pizza on. It makes it easier to get them on and off the grill and it makes it so you don’t burn them as easily.

Actually, I tried using the foil the last time I grilled pizza and it burned horribly. I don’t think it was the foil that caused them to burn, but I wasn’t taking any chances!

I made pizza once and boy was it a mess!! dough every where and burnt smell for days!

Glad it worked out for you. Pizza on the grill is fun and when it is cooler in the fall and winter we all sit outside and eat on the patio. In the summer I sweat it out watching it on the grill because at least it doesnt heat up the house so for me it is worth it! It is a friday night tradition.
(Guess what else works on the grill? Your fabulous whole wheat bread machine pitas. I tried half a batch in the oven and half a batch on the grill. The ones on the grill had 100% poofing success rate and they cook even faster on the grill!

Yep! You can turn out a whole bunch of pitas in no time at all and you don’t have to oil them at all. Just high heat to heat the grill then turn it down ( I turn down to low but you know your grill best) I just make sure they are not covered in too much flour from rolling them out so the loose flour (for lack of a better description) doesnt burn on the grill grates. They are so yummy. Will never buy those tough, high priced pitas again!

Ohhh you are making me REALLY want a grill ! We made pizza but thankfully it wasn’t that hot. But it can ! I will have to start saving up for one after I get my own personal computer saved up for. Tried it tonight! I was a little nervous, especially after flopping dough right on the grill. It just seemed like it was going to be a failure (I have my fair share of those). The pizza was SO tasty though. We loved the crunchy crust – much like a brick oven pizza. I made only half a batch, and it didn’t look like it was going to be enough dough to feed the family, but 3 medium sized pizzas was plenty. I imagine this is a lower carb option when it comes to pizza. It worked great with half whole wheat as well. 🙂

Another upgrade: Used half traditional whole wheat, half “white whole wheat” flour. No problem! The crust is so thin that it just works with anything without feeling heavy. It was a tiny bit harder to roll out, but not too bad. We love it! We also put leftover refried beans, peppers, salsa and Mex cheese on one – seriously yummy. Thanks again!

That looks so simple! I’ve been wanting to try grilling pizzas for a while. Thursday nights are my hubby’s favorite nights b/c he only has 1 more day of work for the week and it’s Pizza Night! We typically make tortilla pizzas in the oven. I normally put drained canned tomatoes as my tomato base, chopped red onion, chopped bell peppers, and feta cheese. Hubby puts bar–b–que sauce as his base, shredded mozzarella cheese, black olives, and pepperoni.
My folks came to visit over the 4th and we made tortilla pizzas with them. We’ve made it with them before. My stepdad really enjoys cooking and comes up with interesting concoctions. For his base, he used French Onion dip! And topped his with veggies and cheese. My mom tasted his and liked it. I’m surprised he didn’t put grape jelly on it–he sometimes does that if his cooking needs a little something and you can’t even taste it!
Anyway, thought I’d share what we do.
I plan on suprising my husband this Thursday night with your grilled pizza recipe! He’s going to be shocked b/c I’m not comfortable using the outdoor grill–I’d rather use the George Forman!

I’ve done grilled pizza forever. No foil, no freezing. I use my homemade bread recipe (about 10 inches or so misshaped crusts). I set up toppings beforehand. I don’t brush crusts, just oil on hands when working. Grill one side, flip, add VARIETY of toppings. I make one each of regular, BBQ chicken (or pulled pork would be good), reuben (the best!), and Mexican hot. They make a beautiful table for company and always wow them. Really easy. All you need is someone to hold the door as you scurry in and out.
