Mexican Chicken Skillet

Mexican Chicken Skillet

serves 8

Ingredients

  • 1/2 cup chopped onions  $.30
  • 1 TBS olive oil  $.10
  • 1 TBS minced garlic $0.10
  • Chicken Breast (chopped) $.75
  • 1 can corn (drained) $0.55
  • 1 can black beans (drained)  $0.55
  • Cooked rice (when making your rice decrease the amount of water by about 1/2 cup and add 1 cup of salsa)  $1.00
  • Tortillas $1.50

Cook your rice according to the directions, except add salsa with your water.

Coat large frying pan with olive oil. Saute onions and garlic and add chicken.

Add beans and corn.

When everything has been heated through add the cooked rice. Serve immediately.

A few notes: Add as much or as little rice as you like. I used 3 cups of uncooked rice for this recipe. I like to use more rice because then I can use less chicken. I also used brown rice. When mixed with the salsa it tastes great and the kids don’t seem to mind!

My family eats this two ways. Some eat it just as it is and others put it on a tortilla with sour cream, lettuce and cheese. It is delicious either way.

Total cost for a meal for 8 = $4.85  ( I did not factor in sour cream, cheese, or lettuce so add about $1.50 to the total if you serve it that way) This feed all 8 of us tonight and we had leftovers.

Looks delicious! I’ll have to bookmark this; I think my husband would really like, except he’d probably want to spoon everything on to a flour tortilla!

I have made this at least twice for my family since finding it on your site and we all love it. We add the salsa later individually along with sour cream and shredded cheddar.

Thanks for joining us for Tasty Tuesday! This looks great and it looks easy to make. We eat a lot with black beans and I use brown rice all the time. I’ll have to try this one day soon! Thanks for the recipe!

I have been keeping a zip loc bag of burritos in my freezer – each burrito individually wrapped in wax paper.I take one to work every day and microwave it for lunch. This saves having to make a sandwhich in the morning. your recipe looks perfect for my plan.

Yummo – this one was calling to me “dh will love this.” I agree, the rice idea is great. Made it just now and waiting to combine rice with the rest when he comes in, any minute. Thanks! (i make something like this in the crock pot – but nice to have a fast version, too)

This reminded me of a homemade Qdoba/Salsarita’s/Moe’s burrito… way cheaper than eating out!
I forgot to put the cheese and sour cream on the table until we were almost done though :( I think that would have added a bit more flavor, but it was still very yummy! Since there’s only 2 of us, I’ll have to remember the add-ons for the leftovers in the next few days!
