Baked Kale Chips

Have you tried making baked kale chips? I was shocked the first time we tried them. Baked kale chips taste so much like a potato chip yet they are a much healthier alternative. What's more: they are really easy to make and take virtually no time to prepare.

Have you tried making baked kale chips? I was shocked the first time we tried them. Baked kale chips taste so much like a potato chip yet they are a much healthier alternative. What’s more: they are really easy to make and take virtually no time to prepare.

If you have access to a Costco, check to see if they carry organic baby kale. The large bags of baby kale are ideal for making these kale chips. All that is required is snapping off any extra long stems. Otherwise, the baby kale is ready to use in this recipe.

If you can’t find baby kale, your prep time will be a bit longer. Buy two big bunches of kale at the grocers for this recipe. Rinse the kale and spin it dry. Then you will need to strip the leaves from the tough kale stem. All you want is the leaves.

Baked Kale Chips

Ingredients

  • 4 cups loosely packed baby kale
  • 2 teaspoons extra virgin olive oil
  • 1/2 teaspoon sea salt or kosher salt

Instructions

  • Preheat the oven to 275°.
  • In a large bowl, toss together the kale, olive oil and salt.
  • Spread kale in a single layer on two large baking sheets. Do not allow the leaves to overlap or they will not crisp.
  • Bake for 20 to 25 minutes.

    The baby kale at our Costco are tiny. I tried making some and they just burn. 🙁

    Made these, love them, but I cooked mine for 10 to 15 minutes and they were perfect.

    I found they were hard to get off the cookie sheet. Next time I think I will leave the stems ON so I have something to grab to lift them off without cracking. They were tasty though.
