For years I’ve tried recipes for oatmeal pancakes and for years my children have told me how much they dislike oatmeal pancakes. It was until I read The $5 Dinner Mom Breakfast and Lunch Cookbook that I realized I should be grinding the oatmeal instead of soaking it, as I had been doing in the past. While I don’t know which is healthier, grinding the oatmeal removed the texture issue that came from mixing it in, and my kids loved these new oatmeal pancakes!
Whole Wheat Oatmeal Pancakes
Ingredients
- 1/2 cup oatmeal
- 1 cup whole wheat flour
- 1/4 cup brown sugar
- 2 heaping teaspoons baking powder
- 1/2 teaspoon salt
- 1 egg
- 1/4 cup applesauce
- 1 1/3 cups milk
Instructions
- Grind the oatmeal in a food processor or blender.
- Combine oatmeal, brown sugar, salt and baking powder.
- Sift the whole wheat flour into the mixture.
- Add the bran and germ (which would have separated during sifting) into the mixture.
- Mix together.
- Add egg, applesauce and milk.
- Mix together until thoroughly blended.
- Cook on a buttered 275/300 degree griddle.
- Flip then serve.
Notes
I have only made these pancakes with fresh ground whole wheat flour. If you are using store bought wheat flour I would use 3/4 cup wheat and 1/4 cup white to keep the pancakes from being too heavy. Thank you for sharing this recipe. I just tried a recipe from the $5 Dinner Mom’s first cookbook and my family enjoyed it. There are quite a few more recipes from the book we plan to try. I will have to look into the Breakfast and Lunch book now.
I use a recipe from Sue Gregg’s Breakfasts cookbook for oatmeal pancakes that my family prefers to all other pancakes. Mrs. Gregg developed a method for grinding and soaking grain in the blender, so my oatmeal gets both–ground and soaked. I was able to make fresh ground muffins, pancakes, etc. while I saved for my grain mill by using my blender. My blender is not a Vitamix so I have to be careful that I don’t overwork it, but it works great for the panccakes and is a great time saver in the morning. Eventhough I now have a grain mill, I still use the blender method for some things.
Although the oatmeal pancake recipe is not on her website, Mrs. Gregg does have demonstrations and recipes using the blender technique at http://www.suegregg.com (I don’t get any reimbursement for the referral. I use her Breakfasts cookbook a lot and I think her technique is helpful–especially for those without a grain mill.)

LOVE this! I have used the oatmeal pancake box mix but prefer making my own. You’ve probably shared this before and maybe I missed it but where do you find fresh ground whole wheat flour? Is it comparable in price?

I grind my own grain for flour. You might be able to find fresh ground flour at your local health food store. If not I would recommend King Arthur whole wheat flour.

Healthy and tasty! Just a note: I find that it still helps to sift store bought whole wheat flour to get rid of those flakes.

Made these this morning for my 3.5 year old and myself. So good!!! Since I had the store-bought WW flour, I took your advice and added a little AP as well. I found that I only needed 1 C of milk, and they turned out perfectly! I added some chocolate chips to a few of them (totally negates the healthy part, but it’s so yummy!) and plan on freezing the extras for those days when I need a quick breakfast for the little one. This morning for breakfast, we had these and she ate two and a half. Impressive, when sometimes she’ll only eat one-half. I will continue to grind my oatmeal for recipes.

Thanks! This sounds great. I make whole wheat Belgian waffles on Sunday night and freeze them for the week. This sounds really healthy, will give them a try this weekend. We reheat the waffles in the toaster oven, but I think pancakes might work better in the microwave as long as you don’t overheat them.

King Arthur Flour’s White Wheat flour is really nice and light and helps with the dense issue. It’s not white flour, it’s just appears white b/c of the grain used…it’s still whole wheat.

I used king authur’s whole wheat flour and doubled the recipe. There was no need at all for the all purpose flour as there was no dense issue. I put the old fashioned oats, sugar in the raw(brown), and 3 tablespoons of flax seeds in the blender and grinded it. I used vegetable oil instead og applesauce and added blueberries. Also you have to pour by 1/4 cup to have perfect pancakes.

Saw this recipe this morning and decided to whip them up. Got part way through mixing the batter and remembered my stove is not working. I decided to make them on the waffle iron instead and they came out great! My kids and I loved them. Will definitely make them again!

Have you ever tried using white whole wheat flour? It is whole grain, however, it doesn’t have the heaviness of traditional whole wheat. I use it to replace all-purpose white flour in all of my recipes and no one has been able to tell the difference yet.
