The next top round recipe is Sumptuous Steak Stir-Fry. I have to admit I was a little concerned when the beef people asked me to make this recipe because lately my kids haven’t been big fans of stir fry.
I however, LOVE stir fry. It is a great way to stretch meat in a meal as well as use up all those leftover vegetables. I am convinced that you can’t really go wrong with ingredients in stir-fry. After some deep thought (okay not really, it was more like process of elimination and interrogation) I realized that my kids don’t like soy sauce, so I made two batches- one with soy sauce, one without.

Steak Stir-Fry
Ingredients
- 1 pound flank steak sliced thin
- 1 small yellow bell pepper cut into thin strips
- 1 cup broccoli florets
- 2 medium carrots shredded
- 1 stalk celery sliced
- 1/2 cup diced onion
- minced onion
- 2 cloves garlic minced, divided
- Goya Adobo All Purpose Seasoning Steak Stir Fry
- Soy Sauce
- 1/4 to 1/2 teaspoon crushed red pepper
- 3 cups hot cooked brown or white regular rice prepared without butter or salt
Instructions
- Marinate the steak in olive oil, Goya seasoning, and minced onion for 2 to 3 hours.
- When you are ready to make the meal, cook the rice according to the package directions.
- While the rice is cooking start chopping the vegetables and the steak. (Depending on the type of rice you are preparing the vegetable chopping and rice cook time will probably be about the same.)
- Once the rice is cooked remove from the heat.
- Using a wok or a frying pan, cook the steak on high (I use a tiny bit of butter) for about 3 minutes. You don’t want to over cook the steak.
- Remove the steak from the wok and add vegetables. You’ll want to cook the veggies in the steak juices. Cook the vegetables for about five minutes.
- Add the steak and rice to the vegetables in the pan. I sprinkled Goya seasoning and added soy sauce and cooked for another minute or two.
- Serve immediately.

Boiled Dinner! I know, it doesn’t sound good, but it is yummy comfort food — Top Round, quartered potatoes, carrots in beef broth with salt, pepper, Worcestershire sauce, onion and garlic, and a splash of wine,. Cook in the crock pot in the summer or the oven in winter. Serve with bread. Yummy!!!

Just a note – not all soy sauces are created equal. Jess never really cared for anything when I used soy sauce. Mainly because it just made the dish really salty and only tasted like soy. Try different brands. They will have a different/better taste.

A beef soup recipe I came up with last year. Our whole family loves it & it is very easy & economical to make.
Cumen Rice Beef Soup
Brown 1/2 lb ground beef in a pot. Remove from pan & set aside. Add 1-3 chopped carrots & 1-2 ribs chopped celery to the pan, leaving a small amount of grease from the burger in the pan. When carrots & celery at starting to get tender, add 1 chopped onion, and chopped garlic to taste. I do about 1-2 tsp of the pre-minced stuff in the jar. Cook until all veggies are almost all the way tender, but not soft or mushy. If you need, you can add a small amount of water or beef stock to the pan to prevent blackening. In another pan begin to heat 2 quarts of water & beef base, or an equal amount of beef stock. Stock should be coming to a simmer as veggies are finishing. Once veggies are tender, add veggies to stock, along with 2 cups instant rice. Brown or white both work. At this time also add your spices, cumen, oregano, & pepper to taste. Simmer soup until rice is done & serve! (If you’d rather use pre-cooked, non-instant rice, simply let the veggies & spices simmer until fully cooked & add pre-cooked rice right at the end just long enough to heat through.)
