Salmon Cake Sandwiches

Salmon Cake Sandwiches (makes 8 )

  • Two cans boneless, skinless salmon, drained
  • 3/4 cup chopped onion
  • 3 eggs
  • 1 cup bread crumbs
  • 1/2 cup mayonnaise (you can use low fat)
  • 4 teasp Worcestershire sauce
  • 1/2 teasp black pepper
  • 1 teasp salt

I beat the eggs first, then take all the ingredients and mix together in a bowl. You might need to adjust the amount of bread crumbs a little to make sure you can form the patties.

Form the mixture into eight patties (similar to hamburgers)

On medium heat coat a frying pan with vegetable oil, then melt 2 tablespoons of butter in the pan.

Fry your salmon patties for about 4 minutes on each side until they are a beautiful golden color.

Set on a paper towel to blot any extra oil.

Serve on a bun with your choice of toppings. We like lettuce and mayo at our house.

Oh, you just took me back to my childhood. My mom used to make Salmon Cakes (or patties as she called them) I haven’t had them in years. I think it’s time I introduced them to my kids! She used to used crushed Ritz crackers instead of bread crumbs. Yummy yummy.

I think the original recipe called for ritz, but unless I have a coupon bread crumbs are cheaper!

We love these! We eat them on buttermilk biscuits with a slice of tomato! Oh, my mom used saltines, so do I.

I love making salmon (or tuna, or bean) cakes for quick dinners through the week. They’re pretty healthy and incredibly quick to whip up. Thanks for sharing.

We love salmon patties! My children don’t actually know they are eating salmon :) The only thing I don’t like about salmon is the smell, YUCK! So, my mother in law taught me a little trick. Cook the patties in your cast iron skillet on the grill outside. We live in Michigan and sometimes you have to shovel out your grill to use it, but I think it’s worth it not to smell salmon for two days :)

My children love salmon patties also. We eat them with raw onion and mustard.
I stick my patties in the freezer after forming them. Then I lightly coat them in flour sprinkled with black pepper, before frying them. I think the freezing step helps them to crisp up and hold together better.
