Ice Cream Cookie Cake ~ Easy and Delicious

My friend served this super simple ice cream cookie cake on Thanksgiving.

The kids scarfed it up so quickly we should have doubled the recipe. It’s so simple to make that you’ll want to make it for every get together, potluck or holiday meal.

What I love most about this ice cream cookie cake recipe is that it only has three ingredients.

The best part about this cake is that it takes 10 minutes to make.

Seriously 10 minutes! 

We used golden and chocolate Oreos in this recipe, but you can use whatever you like. In fact I think it would taste amazing with those mint Oreos and mint chocolate chip ice cream!

Or pumpkin… yum!!!

Ice Cream Cookie Cake

This cake is an easy twist on the traditional ice cream cake. It's a simple ice cream dessert that can be prepared in less than ten minutes and will be loved by the whole family.

Ingredients

  • Ice Cream
  • Cookies Oreos or something similar
  • Chocolate Syrup

Instructions

  • Crush cookies with a rolling pin.
  • Sprinkle them on the bottom of a 9×13 pan.
  • Open container of ice cream flat and slice the ice cream.
  • Place slices on top of the crushed cookies in a single layer...
  • until completely covered.
  • Pour chocolate syrup on ice cream. Repeat.
  • After the second layer of cookies/ ice cream/ chocolate syrup, top with crushed cookies.
  • Finally, drizzle chocolate syrup over the cookies. Place in freezer to set.

Notes

This recipe is great because you can vary it to suit your tastes. Use any ice cream and cookie combination you prefer. You can also add a layer of whipped cream or use caramel or strawberry syrup instead of or in addition to the chocolate.

    This looks yummy! Maybe I’ll use it Sunday for my daughter’s 3oth birthday or maybe we’ll do whoopie pie idea. She loves them and think we’ll just stack them for decor , maybe a candle or two? Fun!

    My mom has made something similar to this for years… she always called it Cinder Cake (not sure where the name originated from!). She usually adds in chopped walnuts, as well! Super great treat for summer cookouts as long as you have freezer room until time to eat! 🙂

    I have done something similar to this. I used Ice cream sandwiches and cool whip. along w/ your favorite cookie or candybar crushed. So good for a Summer birthday cake!

    I love this idea. I can customize a cake to each kids favorite cookie and ice cream flavor. Awesome. The best part is no baking required.
