When I got married, I found out my husband didn’t like chocolate chip cookies. Say what?!?!
Since chocolate chip cookies were one of the few things I knew how to make back then, we didn’t have many sweets in the house during those early years. Eventually, I learned to bake (and loved it) and decided these peanut butter oatmeal cookies were my new favorite.
I’m not sure if cookies can be hearty, but these definitely are. They can also be made with whole grain flour and taste better! While they aren’t healthy, they do have oats and protein-packed peanut butter so they are better for you than a basic sugar cookie. And one cookie can satisfy a craving.
I don’t eat many sweets, but I absolutely love these cookies. They’re definitely worth the extra calories!
Peanut Butter Oatmeal Cookies
- 1 cup shortening
- 1 cup brown sugar
- 1 cup white sugar
- 1 cup peanut butter
- 2 eggs
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- 1 Tablespoon vinegar
- 2 cups oatmeal
- 1 1/4 cups flour
- Preheat oven to 375° F.
- Cream together shortening, sugar, peanut butter, and eggs.
- Add baking soda and vanilla. Mix together.
- Add vinegar and mix again.
- Mix in oatmeal and flour.
- Drop on a cookie sheet and bake at 375 degrees for 8 to 10 minutes.
My kids love these cookies and try to eat them before they are cool enough to take off the cooling rack!
For an even more amazing treat, try spreading Nutella on the cookie before eating. YUM!
