A friend shared this crock pot recipe with me last week and it was a huge hit! It was so easy my five year-old made it (except the chicken part). You’ll love this recipe because it is cheap, healthy, and you probably already have these ingredients in your kitchen!
You can serve this recipe as a soup, or you can use a slotted spoon to drain it a little and serve it in tortillas as a soft taco. No matter how you serve it this crock pot salsa chicken is sure to become a family favorite!
Slow Cooker Salsa Chicken
Servings: 12
Ingredients
- 2 Chicken Breasts
- 2 16- ounce Jars Salsa
- 2 15- ounce Cans Black Beans rinsed, drained
- 16 ounces Frozen Corn
- Garlic
- Sour Cream optional
- Tortilla Chips optional
Instructions
- Spray crock pot with nonstick spray.
- Trim fat off the chicken breast.
- Place chicken breast at the bottom of the crock pot.
- Pour salsa, black beans, and corn on top of the chicken breast.
- Sprinkle with garlic powder.
- Cook on high for 6-8 hours.
- Take chicken out of the bottom of the crock pot and shred with a fork.
- Mix chicken back into the beans/corn/salsa/ mixture.
- Serve with sour cream and chips.

I love this recipe! I’ve been making it for a while except I add cumin to the contents instead garlic. I’ve never thought of serving it with sour cream and tortillas chips though. Sounds good!

We make a very similar recipe, but it has a block of cream cheese added at the end. It’s great, but we’re trying to get away from dairy, so I am thrilled to see this version! Will be trying this weekend, thanks!

I make it w/boneless skinless chicken tenders (4) 1 pkg frozen corn, 1 can black beans (drained), and 1 jar salsa…..even eaiser.

we make it on the stove top in a fry pan w/ a lid. We use boneless CX but pork is also incredibly yummy. We skip the salsa and use 2 cans of ROTEL mild tomatoes (or usually the TARGET store brand at 1/2 the price). At the end, before I serve it, I spoon in 1-2 tbsp of cream cheese. It makes the sauce creamy and mellows the heat.
I LOVE the idea of black beans in it! i wonder if I could do that w/out a mutiny….

This looks a lot like my salsa chicken recipe I make in the crockpot. Mine’s super simple…just chicken, salsa & some seasonings! I have another similar recipe that I”ve been wanting to try that adds some lime juice, corn and black beans! So yummy…definitely a family favorite. I also serve it when we have company and it’s always a big hit! People are shocked at how simple it is!
I’m definitely going to be adding black beans like you do in the future!

Love it when God answers a prayer even about a “lost” recipe! I had seen your recipe for the Salsa Chicken & wanted to print it, but was in a hurry at the time & didn’t. Then, later, when I really wanted the recipe, I couldn’t remember where I had seen it! After racking my brain & searching for a short time, (didn’t want to spend too much precious time just looking for a recipe)I literally prayed that if it was a recipe I could use to make a meal for someone(I’m in a meal ministry @church) that He would bring it to my attention. That was a few days ago. I had ceased searching & was just checking email today & as I went to your site(one of my 2 FAVORITES!) there it was! God cares about all the details of our lives!

This recipe is so easy and delicious. Since I saw it here a couple weeks ago, I have made it twice. The first time we dumped it on rice, and the other day we rolled it up in multigrain soft wraps with cheese and extra taco sauce on the side. I used 6 chicken breasts and 2 jars of salsa. That fed 6 of us and there was leftover for lunch the next day. Enjoy!
