I love buckeyes, they are one of my favorite Christmas candies. What I love about them, is that unlike many other Christmas candy, you don’t have to own a candy thermometer or double boiler.
This foolproof recipe turns out every single time!
Buckeyes
Ingredients
- 2 cups creamy peanut butter
- 1/2 cup butter softened
- 1 teaspoon vanilla extract
- 4 cups sifted confectioners’ sugar
- 6 ounces semi-sweet chocolate chips
- 2 tablespoons shortening if you don’t use shortening you can substitute with paraffin
Instructions
- Line a baking sheet with waxed paper; set aside.
- In a medium bowl, mix peanut butter, butter, vanilla, and confectioners’ sugar to form a smooth stiff dough.
- Shape into ping pong sized balls.
- Place on wax paper, and refrigerate or place in the freezer for 30 minutes
- Melt shortening and chocolate together on stove top over low heat.
- Stirring constantly until smooth, and remove from heat.
- Insert a wooden toothpick into a ball, and dip into melted chocolate.
- Refrigerate for 30 minutes to set.

If you don’t use shortening you can use paraffin… that is so funny to me! I’ve only had paraffin in my house once and that was forever ago to make candles or something. Anyway these are another thing I want for Christmas… along with the sugar cookies, iced of course. You really make it hard for weak people to get throw the holidays without sweets! But I say, bring it on!

I am a new reader to your blog. We call them chocolate covered Peanut Butter Balls. I also use one cup crunchy and one cup creamy peanut butter as well as Rice Crispies.
I also drizzle them with white chocolate. I love to make these around any holiday…and they make into great gifts.
I also use Paraffin wax with mine.

In order to cut back on the amount of sugar, I’ve substituted 1 c. of very finely crushed graham crackers for 1 c. of sugar. i’ve also added finely chopped raisins and cut out a little more sugar. Sometimes, the ‘dough’ is rather sticky without all the sugar, but a half hour in the ‘fridge helps firm it up.(Some people add krisped rice cereal, too – but, I don’t.). We actually prefer them not so sweet, and we dip them in dark chocolate.
