Almond Oatmeal Breakfast Bites at The Happy Housewife
My kids love to help in the kitchen. I love finding recipes that they can help with and that they’ll love to eat. These almond oatmeal breakfast bites make a great quick breakfast or afternoon snack.

Almond Oatmeal Breakfast Bites

Ingredients

  • 1/2 cup Jif® Creamy Almond Butter
  • 1/3 cup honey
  • 1 teaspoon vanilla extract
  • 1 cup old-fashioned rolled oats
  • 1/2 cup wheat germ
  • 1/4 cup coarsely chopped whole peanuts or almonds
  • 3 tablespoons chocolate chips
  • 1/8 teaspoon ground cinnamon

Instructions

  • MIX almond butter, honey and vanilla in large bowl.
  • Stir in oats, wheat germ, almonds, chocolate chips and cinnamon until evenly moistened.
  • Shape into 1-inch balls.
  • Chill 10 minutes and serve

Nutrition

Serving: 1g

These breakfast bites are so easy to make and my kids made them almost totally by themselves.

One thing I’ve realized over the past several years is that the more my kids help in the kitchen the more they want to eat what we make. Here are a few things kids can do in the kitchen to help.

  • Measure ingredients.
  • Pour ingredients.
  • Mix batter.
  • Spoon out dough.
  • Lick the bowl!

    I love Jif so thank you for offering this. We like to serve breakfast for dinner sometimes. I love oatmeal with peanut butter. Crunchy peanut butter is good in oatmeal too sometimes.

    My family likes to mix up mealtime by having a at home picnic! We like to put a blanket on the floor and eat in the living room by the fireplace! We love JIF too! Our very favorite!

    I am eating peanut butter baked oatmeal as I type this. 🙂 We sometimes have movie night, where I make party type food for dinner and we eat watching a movie. TV is OFF at dinner, so this is a rare thing for us.

    We have crock pot oatmeal almost every morning with peanut butter, raisins and cane syrup. Delicious, ready when the early bird has to leave, and still perfect when the rest of us want breakfast.

    I have 5 boys so that’s one for every weekday…I try to have at least one boy help for a whole day in the kitchen each week. It doesn’t always happen the way I plan, but they usually help a lot anyway.

    Sometimes we mix it up by dragging out the card table and setting it up on the porch and dining al fresco! The kids LOVE it and the change of scenery helps to shake everyone out of their crabbiness/tiredness, even me. 😉

    We let our girls help stir, measure, set the table, anything really that is safe for them to do and time allows. My girls love to be near me when I cook.

    My kids and I love to make different recipes and bake them in muffin tins. They help with portion control. We always make extra to keep in the fridge for a quick snack.

    We try to invent new ways to eat old classics. Like if we would eat a peanut butter and banana sandwich, try making that into peanut butter and banana pancakes and add a few extra toppings, like honey. My son is allergic to peanuts, but can have tree nuts. We haven’t tried the almond butter, but would love too!

    We mix it up at mealtime in so many ways! We do a meal-swap with my neighbor once a week. We take turns making a double batch of something and then walking it down the street to deliver to our friends. Nice to have a break from cooking one night a week. We do picnic dinners with sandwiches, pasta salad, and fruit that we eat outside on a blanket in the grass. We also do homemade pizza night with crazy and fun combinations – like taco or cheeseburger pizza, bbq chicken pizza, and yummy dessert flavors like apple pie or PB&J pizza

    I just went through a bunch of old cookbooks and things I’d cut out to see what I haven’t made in a while, made a list of those things, and have been adding them to family favorites throughout the week. My kids, however, are not amused! BTW, we make the recipe you have listed with regular peanut butter, some wheat germ and add coconut rather than other nuts. We call them protein balls and they are a huge hit.

    We mix up meal time by having the grandkids play restaurant. They have fun choosing the selections, printing menus, helping to make and serve the food. Now to get help with the clean up and it will really be mixed up.

    I wish that I had a tip for mixing up mealtime but I am horrible at it. Homeschooling is actually helping me mix up mealtime a little bit. Our reading comp guides sometimes suggest recipes or other food-related activities that go along with the chapters in the books we are reading. This has helped me with new meal ideas and the kids really enjoy helping with these meals.

    crock pots! with just about every recipe for it, mix it all up and let it cook for 6-8 hours. easiest thing ever.
