Menu Plan: Cook Once, Eat Twice

My cooking goal this week is to make every meal last for two meals. The lemon chicken will be used for pasta the following night, and the beef roast will be used in beef burritos.

After a week of eating sandwiches, snacks, and hamburgers I’m ready for some REAL food this week! As fun as vacation is, it is nice to be back in my own kitchen. I’m super excited to try some recipes from my new cookbook, CookWise and dig out some of my old favorite cookbooks to find some new recipes for 2011.
