Chicken Tetrazzini at The Happy Housewife

Chicken Tetrazzini

Course: Main Dish
Author: Toni Anderson

Ingredients

  • 1 box noodles
  • 2 cooked and chopped chicken breasts
  • ½ cup shredded zucchini
  • ½ cup shredded carrots
  • ½ cup chopped onion
  • 3 tablespoons butter
  • 1 tablespoon of minced garlic
  • 1 can cream of chicken soup
  • ½ cup sour cream
  • ½ cup milk or heavy cream
  • ½ cup parm cheese
  • salt and pepper to taste

Instructions

  • Cook the noodles.
  • While the noodles are boiling, melt butter on low heat in a frying pan. Add garlic, onion, zucchini and carrots. Saute for about 3 minutes.
  • Add soup, sour cream, milk, cheese and chicken. Stir over low heat, until noodles are done boiling.
  • Drain noodles and add to the mixture. Toss well and serve immediately.

    mmmmm… i love spinach..wonder how it would taste with Spinach (chopped/frozen) instead of the Zucchini? hhmmm

    Great recipe. My daughter loved it. But after a while it seems too creamy. I made it with Fat Free milk and lite sour cream. Maybe switch soup to fat free and skip the sour cream? Any thoughts?

      Not sure, my kids love creamy….. maybe use some chicken broth instead of soup. I use the fat free soup most of time, because it is usually what is on sale.

    I made this last week and didn’t tell my kids that there was zucchini in it. My oldest wouldn’t have cared, but the younger one would have looked to pick it out. I told my husband after he started eating it. My sons never noticed and my husband said he never noticed until the last bite when he saw a piece of it (he’s not a big fan either). My youngest said “this is great mom!” and the husband said it’s a grate 😉 idea to put shredded zucchini in so it’s not as noticeable. It got me wondering what else I can shred to add to our foods so my family wouldn’t notice, but we get more veggies. hehehe
