The Best Marinades for Meat

When I first was young I had no idea how to cook meat. I quickly realized that meat required some kind of seasoning. I discovered Lawry’s marinades and used them for years. They were good but not great. Over time I realized that a great marinade can make your grilled or broiled meat taste amazing. These three marinades are perfect for chicken, steak, or pork and you probably already have the ingredients in your kitchen.

Personally I like to prepare the marinade, add the meat, then put it all in a gallon size Ziploc bag and freeze. You can buy a large pack of chicken at Costco or Sam’s Club and prepare it in advance and have dinner on the table in under an hour on busy nights.

If you want to make the meat the same day, make sure you allow for time to marinade. I like to give it at least 4 hours, but you can shorten it to 2 hours if you don’t have as much time.

Remember if you don’t have fresh herbs you can always use dried ones in a pinch.

Marinades

Ingredients

Chicken Marinade

  • ½ cup fresh lemon juice
  • 3 tbsp Worcestershire Sauce
  • ¼ cup olive oil
  • 2 tbsp fresh oregano minced or 2 teaspoons dried oregano
  • ¼ cup fresh parsley minced and lightly packed or 4 teaspoons dried parsley
  • ¼ cup fresh basil minced and lightly packed or 4 teaspoons dried basil
  • 3 cloves garlic minced
  • 1 tbsp brown sugar
  • ½ tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 4 pcs skinless chicken breasts boneless

Steak Marinade

  • ¼ cup low-sodium soy sauce
  • ¼ cup olive oil
  • ¼ cup Worcestershire sauce
  • 1 tbsp dijon mustard
  • 2 cloves garlic minced
  • 1 tbsp dried minced onions
  • 2 tbsp steak seasoning
  • 1 tbsp fresh parsley finely chopped
  • 4 steaks

Pork Marinade

  • ½ cup soy sauce
  • ¼ cup Worcestershire sauce
  • 1 tbsp dijon mustard
  • 2 cloves garlic minced
  • ¼ cup brown sugar
  • 1 tsp pepper

Instructions

Chicken Marinade

  • Add all marinade ingredients to a medium bowl and whisk until completely combined
  • Add chicken to large resealable bag
  • Pour marinade over chicken, seal
  • Place in refrigerator to chill up to 4 hours
  • Remove from refrigerator and set at room temperature, 20-30 minutes
  • Cook on grill or in oven

Steak Marinade

  • Combine all ingredients in a bowl and whisk until combined
  • Add steak to resealable bag
  • Pour marinade over steak, seal and refrigerate for 1-4 hours **see notes
  • Remove steaks, discard marinade and allow to come to room temperature
  • Grill steaks as desired

Pork Marinade

  • Combine all ingredients in a bowl and whisk until combined
  • Add pork to resealable bag
  • Pour marinade over pork, seal and refrigerate for 1-4 hours
  • Remove pork, discard marinade and allow to come to room temperature
  • Grill or cook pork in oven as desired

Notes

** Marinade time will vary depending on the thickness and quality of steak
