Easy, No Rise Cinnamon Rolls
So good you’ll think your grandmother made them! These rolls are delicious and take about 40 minutes from start to finish including baking time. The recipe makes about 10 rolls.

Ingredients
For Dough:
- 2 cups whole wheat flour
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- 1/2 stick butter softened
- 3/4 to 1 cup milk
For Filling:
- Butter
- Brown Sugar
- Cinnamon
For Icing:
- 3 tablespoons butter softened
- 3 cups powdered sugar
- 3 tablespoons cream cheese softened
- 1 teaspoon vanilla
- Milk
Instructions
- Mix together the dough dry ingredients.
- Then cut in the butter.
- Add milk until the dough is a bit sticky.
- Put on a floured surface and roll out.
- Spread filling on the on the rolled out dough. (Butter first, then sugar, then cinnamon.)
- Use as much or as little as you want.
- Roll up and slice into rolls.
- Bake in a 375 degree oven for about 25 minutes, less if you are using white flour.
- You can bake them on a cookie sheet, 9×13 casserole pan, or round cake pan. If you are using 100% wheat flour it is better to use a pan with sides as the rolls have a tendency to spread out a little more.
- While rolls are baking, mix together butter and cream cheese.
- Then add powdered sugar and vanilla.
- Add milk until you get a consistency that can be drizzled on the cinnamon rolls.
- When the rolls are finished drizzle with frosting.
Notes
Editor’s note: These do not taste like Cinnabon cinnamon rolls. They are more biscuit like in taste, but they are delicious!

I saw this recipe I think during the summer on one of your blogs. I was always afraid to make it thinking it was going to be too complicated.
NOT ANY MORE!! I just made them and they have been gobbled right up. Everyone said they were great. Much better than the kind you find in the can.
As far as difficultly….NOT!! Super easy. It took me about 50 minutes to make. Not bad especially considering I am very slow when it comes to making new recipes and I am still pretty green when it comes to cooking.

I have always wanted to learn how to make cinnamon rolls from scratch. I make the Pillsbury ones every Saturday, and even though they taste good I always prefer homemade things. These look so delicious. I will definitely be making these sometime soon. Thank you so much for the recipe.

I made them today and they were very easy. The topping was great. I used half wheat and half white flour for the bun and it was a little too wheaty for me but not for my husband. I also cooked them too long so they weren’t gooey enough. I would bake them only 15 minutes next time. Lastly, I would try them in a smaller pan so they are all next to each other so they don’t spread out so much. Thanks for the recipe!

I did not have much luck with this recipe. It was very sticky and did not roll very well. I used whole wheat flour. My family ate it but did not seem to care for the texture. Do you use whole wheat pastry flour and not whole wheat flour?

This recipe has more like a biscuit taste, perhaps you needed to add more flour. I used soft white flour, which I ground from the wheat berries. It does make a difference when you use fresh ground flour.

These look great! Can I assemble everything into the roll, say 24hrs in advance? Then cut them when I am ready to bake? Yes, you can make ahead and store in the fridge. Just wrap tightly in plastic wrap.

I’m not sure, I’ve never tried it in the bread machine. I’m not sure how they could turn out because this is a no rise recipe and most bread machines have a rise setting.

What did I do wrong?! I made these for my husband’s birthday this morning. We each took only a bite and couldn’t finish. They tasted like sand. They were so bad we both felt nauseous. Even w/ lots of the yummy icing my kids said they didn’t like them. I’m afraid to try again and waste the money on ingredients.

I have no idea. We’ve made these probably 30 times with great success. Did you use whole wheat flour that was rancid? Did you switch the baking powder and baking soda measurements?
Perhaps your family just doesn’t like this recipe. Although I suspect if you felt nauseous one of your ingredients might have been bad.

My mom used to make cinnamon rolls likes these with Bisquick, mostly when we had “Breakfast for Dinner”, and instead of icing, we could just put a dab of extra butter on top. They ARE delicious.

They are in the oven now! So far, so good, very easy to make. I’ve not made them before, so I really had no clue how much butter/sugar/cin to use.
Not bad! They just came outta the oven and they are biscuit-y like you said. They’re good. I only had white flour, so I used that and about 2 tbls butter, 1 cup brown sugar, and about 1 tbls of cinn. I would probably use more butter, less sugar, and more cinn next time.

I made these with a gluten free flour mix and adapted the recipe a bit – they came out delicious!
1 1/2 cups GF flour mix (one that includes xantham gum)
1/8 cup brown sugar (optional)
3 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1/2 stick butter (softened)
3/4 to 1 cup milk
1 tsp vanilla extract
