I am so excited to have this guest post from one of my favorite food bloggers, Lynn from Lynn’s Kitchen Adventures. I have to say I have never tried a recipe of hers that we didn’t love!
Making bread at home is healthier and more frugal then buying it. I have always enjoyed making bread and rolls, but I did not always do it. I have used the excuse that I did not have enough time, but I think it was more like I did not make the time. Since we avoid most packaged and processed foods now I am trying to make all my own bread and rolls.
This recipe is one that I made many times before, but I have recently adapted it to make them healthier using whole wheat. They are a nice roll and leftover ones make great sandwiches. They are a little chewy like French bread which gives them a little different texture than your average roll. These also hold up well for a few days. I hope you enjoy these as much as we do.
Whole Wheat French Bread Rolls
Ingredients
- 1 1/2 cups warm water 110 degrees F/45 degrees C
- 1 tablespoon active dry yeast
- 2 tablespoons white sugar
- 2 tablespoons vegetable oil
- 1 teaspoon salt
- 2 cups bread flour
- 2 cups whole wheat flour
Instructions
- In a large bowl, stir together warm water, yeast, and sugar.
- Let stand until creamy, about 10 minutes.
- To the yeast mixture, add the oil, salt, and 2 cups flour.
- Stir in the remaining flour, 1/2 cup at a time, until the dough has pulled away from the sides of the bowl.
- Turn out onto a lightly floured surface, and knead until smooth and elastic, about 8 minutes.
- Lightly oil a large bowl, place the dough in the bowl, and turn to coat.
- Cover with a damp cloth, and let rise in a warm place until doubled in volume, about 1 hour.
- Deflate the dough, and turn it out onto a lightly floured surface.
- Divide the dough into 16 equal pieces, and form into round balls.
- Place on lightly greased baking sheets at least 2 inches apart.
- Cover the rolls with a damp cloth, and let rise until doubled in volume, about 40 minutes.
- Meanwhile, preheat oven to 400 degrees F
- Bake for 18 to 20 minutes in the preheated oven, or until golden brown

I really need to get over my fears and make bread. My problem is I always add too much flour, the dough ALWAYS feels sticky to me. I need to get a bread machine to take the guess work out of that part and I believe I’ll be set. Thanks for posting the recipe!

I like knodding my dough. Eventually you find the right texture. I have stopped buying commercial bread almost 8 years ago. I have never regretted this choice.
Cheaper, healthier, it takes no real effort. If you can’t do it every day, you can freeze.
My kids have only a few days in wich they eat at school. I do a nice “focaccia” (that is bread dough flattened down as in a pizza with olive oil and salt) and fill it with ham, or cheese, or tomato and mozzarella. It takes less than 20 minutes.

Mmm. I’ve been making french bread baguette/roll things for us to make sandwiches out of. We love it, but my recipe isn’t whole wheat. I will definitely have to try these!

Those rolls sound so good! Today’s my shopping day. I think I’ll add the ingredients to my list. I used to live in Europe and rolls with french bread texture are the norm there. I have a very hard time finding anything but soft bread here in the good ole USA.

Hi, I saw this post and decided I had to try these. I made them last night for dinner. I ground my own wheat first into a flour and then proceeded with the recipe. Mine turned out VERY heavy. They tasted good, but they didn’t turn out like you described in texture. Can any one tell me why they think that is? I am new at doing this, so I need some help/pointers. Also, mine cracked on top and didn’t come out smooth looking as you pictured. Are they supposed to spread/rise a little while baking? Thank you soooo much in advance for taking time to respond!

Why is it called French bread?

Wkares, I have never used self rising flour in yeast products. Self rising flour should be used in things like biscuits and cobblers. This recipe needs the yeast for them to rise. Yeast and self rising flour are not interchangeable. They are called french bread b/c of the texture of these rolls. They are a little different then a normal roll. The texture is more like french bread than your average roll.

FINALLY… A roll mix that worked for me. I made these friday and used them as hamburger buns.. PERFECT.
Used them Sunday for grilled ham and cheese sammys.. PERFECT again…

I am definitely wanting to try these as hamburger buns, as I have 2 meals needing buns this week. My question is this…how do I need to adapt this recipe for a bread machine that only makes 1.5 loaf of bread? Anyone help? It’s a hand me down machine from my grandparents.

I made these tongiht with my goulash. Outstanding. I did not have whole wheat flour just all purpose and they were so good. Beautiful and golden brown, I will blog about them soon.

Hi, I want to try these but have a question about the yeast. Is it bread machine yeast or packets of yeast? I have bread machine yeast but do not know how much of it to use.

Lynn, I have never used bread machine yeast because I do not have a bread machine. But I think it is basically the same as regular yeast and you should be able to use it just the same in this recipe.

I have loved the recipes from this site for whole wheat waffles, whole oat flour pancakes, and now these French rolls. But what I’m REALLY looking for is a 100% whole wheat recipe that I can make in my Bosch mixer and turn out quality French bread or baguettes. Chewy texture, open crumb, etc. Any recipes you can share????
