I’m not a huge fan of guacamole, however many members of my family LOVE it! I put off making homemade guacamole for years until a friend showed me this super easy recipe!

I could go on and on about how easy this guacamole recipe is and how if you take it to a potluck everyone will be jealous about your mad guac skills. However, you probably found this recipe while looking for a fast and easy guacamole recipe to make right this minute, so let’s get to it!

Course: Appetizer
Cuisine: Mexican
Servings: 4

Ingredients

  • 1 ripe avocado
  • 1 Tablespoon salsa
  • Lime juice
  • Salt

Instructions

  • Cut the avocado in half and scoop out the insides. Mash in a bowl with a fork.
  • Add about a Tablespoon of salsa, a splash of lime juice, and a dash of salt.
  • Serve immediately.
  • If you have more time and ingredients add minced garlic and chopped fresh cilantro to taste.

Here’s a little trick I learned from the produce guy at Publix. If you run to the store at 1pm looking for avocados for dinner tonight (ahem), and they only have unripe ( hard) avocados you can still make guacamole.

Take the hard avocados and place them in a Ziploc or plastic produce bag. Seal the bag shut. Place the bag in a sunny, warm spot or on the dryer while the dryer is running.

In a few hours the avocados will soften up. It takes about 3 hours and you need a really warm spot to make this work, but it does soften them up enough to make guacamole in time for dinner.

Enjoy!
