Several months ago I did a 24 day cleanse. I didn’t actually make it through the full 24 days, but one thing I did like about it was increasing the fruits and vegetables in my diet.
A while back I made sweet potato tuna burgers and hesitated sharing them on the site because when I found the original recipe I thought- sweet potato and tuna? Gross! But I changed up the recipe a ton they were delicious. Since they are chock full of sweet potatoes they are perfect for this challenge!
So if the combination scares you, like it did me- don’t let it! You’ll really like these burgers. I served mine on a bed of lettuce, but you could also serve them in a lettuce wrap or on a bun.
You could also make mini burgers and serve them on a bed of greens or if you are like, serve them on a sweet roll. 🙂
Sweet Potato Tuna Burger
Ingredients
- Two medium sweet potatoes cooked and mashed.
- Two 7oz cans of tuna packed in water
- A teaspoon minced garlic
- ¼ cup diced red onions
- Two green onions chopped
- 1/4 cup parsley chopped
- 1 teaspoon paprika
- Salt and pepper
- 2 tablespoons of olive oil
Instructions
- Mix together all ingredients except olive oil.
- Shape into patties.
- Fry in olive oil in a skillet on medium heat 2-3 minutes per side.
- Serve.
