Preheat your oven to 400 degrees.
Line a baking sheet with aluminum foil.
Wash and chop your vegetables. I like bigger pieces and make sure they are all similar in size.
Place all your chopped vegetables in a bowl.
Drizzle liberally with olive oil.
Add salt, pepper and minced garlic.
Toss vegetables.
Place vegetables on foil lined baking sheet.
Make sure the vegetables aren't crowded on the sheet.
Bake at 400 degrees for 30-40 minutes.
