Instructions
In a large bowl, combine the apples, onion, pepper, walnuts, and parsley.
Mix together the lime zest, juice and honey.
Pour over the fruit and vegetables and stir together.
Salt to taste.
Allow to marinate in the refrigerator for up to an hour before serving.
Notes
Choose firm, crisp apples, such as gala, granny smith, jona gold, or fuji. You can use 2 of the same variety or mix it up with 2 different varieties. Avoid red delicious, because it tends to brown.
