Apple Salsa

Ingredients

  • 2 large apples chopped (1 or 2 varieties)
  • ¾ cup red onion chopped (about ½ of large onion)
  • 1 red pepper chopped
  • ½ cup coarsely chopped walnuts (be sure not to over-chop the walnuts the flavor will get lost in the salsa
  • 1 - 2 tablespoon chopped fresh parsley
  • juice and zest from 1 lime
  • 2 tablespoons honey
  • pinch of salt to taste
  • ½ - 1 jalapeno chopped (optional if you like a little heat)

Instructions

  • In a large bowl, combine the apples, onion, pepper, walnuts, and parsley.
  • Mix together the lime zest, juice and honey.
  • Pour over the fruit and vegetables and stir together.
  • Salt to taste.
  • Allow to marinate in the refrigerator for up to an hour before serving.

Notes

Choose firm, crisp apples, such as gala, granny smith, jona gold, or fuji. You can use 2 of the same variety or mix it up with 2 different varieties. Avoid red delicious, because it tends to brown.
