Cheesy Baked Mexican Rice

Ingredients

cups
cooked rice
1
cup
shredded colby jack or cheddar cheese
divided
2
eggs
1
cup
milk
1/2
cup
salsa
1/2
cup
sour cream
1/2
teaspoon
salt
Instructions
In a bowl mix all the ingredients but using only half the cheese.
Spread into a greased 8x8 pan or similar casserole dish and spread remaining cheese on top.
Bake at 400° for 20-25 minutes or until hot through and cheese is melted.
