Cheesy Baked Mexican Rice

Ingredients

  • 4 cups cooked rice
  • 1 cup shredded colby jack or cheddar cheese divided
  • 2 eggs
  • 1 cup milk
  • 1/2 cup salsa
  • 1/2 cup sour cream
  • 1/2 teaspoon salt

Instructions

  • In a bowl mix all the ingredients but using only half the cheese.
  • Spread into a greased 8x8 pan or similar casserole dish and spread remaining cheese on top.
  • Bake at 400° for 20-25 minutes or until hot through and cheese is melted.
