Crockpot Beef Tips Sliders

Delicious and easy dinner idea. Perfect for potlucks too!

Equipment

Ingredients

  • 1 pound beef tips
  • 3 TBSP butter
  • 1 onion
  • 4 cups beef stock I use better than bullion mixed with water.
  • 1/4 cup Worcestershire sauce
  • 1/3 cup soy sauce
  • 1 TBSP minced garlic
  • 1 teas salt
  • 1 teas pepper
  • 1/2 teas thyme
  • 1/2 teas rosemary
  • 6 ounce tomato paste small can

Sandwiches

  • 1 pack Hawaiian rolls
  • 1 TBSP butter
  • 1 TBSP olive oil
  • 1 onion
  • blue cheese

Instructions

  • Melt butter in skillet.
  • Add beef tips and brown. This takes 2-3 minutes, do not overcook.
  • Remove beef from heat.
  • Dice onion.
  • Add onion, stock, Worcestershire, soy sauce, tomato paste, and seasonings to the crock pot.
  • Mix together.
  • Add beef tips to the crockpot including any drippings from the pan.
  • Make sure the beef is completely covered by the liquid. If not add water.
  • Cook on low for 6-8 hours.
  • Beef is done when it falls apart when touched with a fork.

Sandwiches

  • Slice onion into slices.
  • Heat butter and olive oil in a skillet.
  • Add onion and stir frequently.
  • You are basically caramelizing the onions - but this takes forever so I usually cook them for about 25-30 minutes and add a little sugar to help caramelize them.
  • Slice Hawaiian rolls in half to make the sandwiches.
  • Add beef tips, blue cheese, and onions.
  • If you don't like blue cheese you can make this with sharp cheddar and dijon mustard or your favorite cheese and a spicy mayo. Any way you make these sandwiches they are delicious.
  • I serve them just like this but you can put the sandwiches on a pan and toast them for 3 minutes in the oven if you want to get fancy.
