Personally, I think beans have gotten a bad rap. Beans and rice don&#8217;t have to taste bad! If prepared correctly they taste great and are full of protein, without the high cost. <a target = \"_blank\" href=\"https:\/\/thehappyhousewife.com\/cooking\/beans\/\" rel=\"false\">Black beans<\/a> are a favorite at my house because they can be used in many different recipes.<\/p>\n<p>You can buy black beans in a can or dried. Depending on the sales, dried beans are usually cheaper, but canned are more convenient.<\/p>\n<p>To prepare dried black beans rinse, then soak overnight in water.<\/p>\n<p><img decoding=\"async\" src=\"\/\/i533.photobucket.com\/albums\/ee336\/anderbach\/IMG_0046.jpg\" alt=\"\" width=\"474\" height=\"316\" \/><\/p>\n<p>In the morning dump the water and place beans in a crock pot.<\/p>\n<p><img decoding=\"async\" src=\"\/\/i533.photobucket.com\/albums\/ee336\/anderbach\/IMG_0047.jpg\" alt=\"\" width=\"488\" height=\"326\" \/><\/p>\n<p>Cover the beans with water. Add spices, I like to add salt, pepper, garlic and either minced or chopped onion.<\/p>\n<p><img decoding=\"async\" src=\"\/\/i533.photobucket.com\/albums\/ee336\/anderbach\/IMG_0048.jpg\" alt=\"\" width=\"495\" height=\"330\" \/><\/p>\n<p>Cook all day on high.<\/p>\n<p><img decoding=\"async\" src=\"\/\/i533.photobucket.com\/albums\/ee336\/anderbach\/IMG_0049-1.jpg\" alt=\"\" width=\"501\" height=\"334\" \/><\/p>\n<p>When finished cooking the beans will retain their shape but can be crushed easily with a spoon.<\/p>\n<p><em><strong>Super cheap meal: Basic Beans and Rice<br \/>\n<\/strong><\/em><\/p>\n<ul>\n<li>1 bag black beans prepared in the crock pot <em>$2.00 beans plus spices<\/em><\/li>\n<li>3 cups of uncooked brown rice <em>$0.50<\/em><\/li>\n<li>chicken broth<a href=\"http:\/\/thehappyhousewife.com\/whole-chicken-in-a-crock-pot\/\" rel=\"false\"> <em>free from whole chicken<\/em><\/a><\/li>\n<\/ul>\n<p>Cook rice according to directions substituting chicken broth for the water. Mix together with black beans. Serve.<\/p>\n<p><strong>Total cost for 8 (with leftovers) servings $2.50 or $0.31 cents a serving.<\/strong><\/p>\n<h4><em>Cheap meal: Mexican Chicken Skillet<\/em><\/h4>\n<address>serves 8<\/address>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>1\/2 cup chopped onions <em> $.30<\/em><\/li>\n<li>1 TBS olive oil <em>$.10<\/em><\/li>\n<li>1 TBS minced garlic <em>$0.10<\/em><\/li>\n<li>2 cups cooked chicken (chopped) <em>$.75<\/em><\/li>\n<li>1 can corn (drained) <em>$0.55<\/em><\/li>\n<li>2 cups black beans cooked <em>$0.40<\/em><\/li>\n<li>3 cups cooked rice (when making your rice decrease the amount of water by about 1\/2 cup and add 1 cup of salsa)<em>$0.50<\/em><\/li>\n<li>Salsa <em>$1.00<\/em><\/li>\n<\/ul>\n<p>Cook your rice according to the directions, except add salsa with your water.<\/p>\n<p><img decoding=\"async\" src=\"\/\/i533.photobucket.com\/albums\/ee336\/anderbach\/DSCF1074.jpg\" alt=\"\" width=\"471\" height=\"353\" \/><\/p>\n<p>Coat large frying pan with olive oil. Saute onions and garlic and add chicken.<\/p>\n<p><img decoding=\"async\" src=\"\/\/i533.photobucket.com\/albums\/ee336\/anderbach\/DSCF1078.jpg\" alt=\"\" width=\"471\" height=\"353\" \/><\/p>\n<p>Add beans and corn.<\/p>\n<p><img decoding=\"async\" src=\"\/\/i533.photobucket.com\/albums\/ee336\/anderbach\/DSCF1081.jpg\" alt=\"\" width=\"482\" height=\"361\" \/><\/p>\n<p><img decoding=\"async\" src=\"\/\/i533.photobucket.com\/albums\/ee336\/anderbach\/DSCF1082.jpg\" alt=\"\" width=\"482\" height=\"361\" \/><\/p>\n<p>When everything has been heated through add the cooked rice. Serve immediately.<\/p>\n<p><img decoding=\"async\" src=\"\/\/i533.photobucket.com\/albums\/ee336\/anderbach\/DSCF1085.jpg\" alt=\"\" width=\"495\" height=\"371\" \/><\/p>\n<p>A few notes: Add as much or as little rice as you like. I used 3 cups of uncooked rice for this recipe. I like to use more rice because then I can use less chicken. I also used brown rice. When mixed with the salsa it tastes great and the kids don&#8217;t seem to mind!<\/p>\n<p><strong>Total cost for a meal for 8 = $3.70 or $0.46 cents per serving<\/strong><\/p>\n<p><em><strong>Cheap Meal that Tastes Like a Million Bucks<\/strong><\/em>:<strong><em> Black Bean Burritos<\/em><\/strong><\/p>\n<p>Prepare the Mexican Chicken Skillet. Place mixture in large tortilla, add a tablespoon of cheddar cheese. Roll up and wrap in foil. I realize some of these meals take a bit of preparation, but sometimes we have more time than money.
