class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Sear all sides of the tenderloin, about 1-2 minutes per side, until browned.<\/div><\/li><li id=\"wprm-recipe-29305-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Place pork tenderloin in a roasting pan and bake in the oven until the internal temperature on a thermometer reads between 145 degrees F. (medium rare) and 160 degrees F. (medium), about 15-18 minutes.<\/div><\/li><li id=\"wprm-recipe-29305-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Remove pork from the oven and cool to room temperature. Wrap tightly and refrigerate overnight.<\/div><\/li><li id=\"wprm-recipe-29305-step-0-6\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">In a small bowl, whisk together lemon juice, \u201cThe Chee\u201d sauce (or kimchi base), and olive oil. Season with salt.<\/div><\/li><li id=\"wprm-recipe-29305-step-0-7\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Toss 1\/4 cup of lemon-chee dressing with arugula and nectarines. Season with salt.<\/div><\/li><li id=\"wprm-recipe-29305-step-0-8\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Mix remaining lemon-chee dressing with mayonnaise and set aside.<\/div><\/li><li id=\"wprm-recipe-29305-step-0-9\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Remove pork from fridge and cut 12 very thin slices on a slight diagonal.<\/div><\/li><li id=\"wprm-recipe-29305-step-0-10\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Fill a small bowl with room temperature water. Working with one spring roll wrapper at a time, soak wrapper in bowl of water until softened.<\/div><\/li><li id=\"wprm-recipe-29305-step-0-11\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Lay wrapper flat onto a clean work surface.<\/div><\/li><li id=\"wprm-recipe-29305-step-0-12\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Lay 2 leaves of radicchio Treviso on top of wrapper, then some mint and two pieces of pork tenderloin.<\/div><\/li><li id=\"wprm-recipe-29305-step-0-13\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Top with arugula salad and roll up the spring roll wrapper tightly and slice into 6 pieces.<\/div><\/li><li id=\"wprm-recipe-29305-step-0-14\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Repeat with remaining spring roll wrappers.<\/div><\/li><li id=\"wprm-recipe-29305-step-0-15\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Place spring roll pieces cut side down on a serving platter, and drizzle with lemon-chee mayo.<\/div><\/li><\/ul><\/div><\/div>\n<div id=\"recipe-video\"><\/div>\n<div id=\"recipe-29305-notes\" class=\"wprm-recipe-notes-container wprm-block-text-normal\"><h3 class=\"wprm-recipe-header wprm-recipe-notes-header wprm-block-text-bold wprm-align-left wprm-header-decoration-none\" style=\"\">Notes<\/h3><div class=\"wprm-recipe-notes\"><span style=\"display: block;\">*You can find Kimchi base or an alternative Asian hot sauce (i.e. Sriracha) in the ethnic or Asian section of most major supermarkets, or in any Asian specialty markets.<\/span><\/div><\/div>\n<\/div><\/div>\n<p><em>\u00a0I work for the Pork Council as a member of the Pork 5.
