What seems to happen with my mixes is that I&#8217;m usually left with a little bit left at the end that doesn&#8217;t make enough pancakes for my family. I usually make <a title=\"No Mess Potato Pancakes\" href=\"http:\/\/thehappyhousewife.com\/cooking\/no-mess-potato-pancakes\/\">potato pancakes<\/a> with my leftover mix, but last week Hungry Jack challenged me to use up the box.<\/p>\n<p>These breakfast sandwiches were a hit with my kids. You should be able to freeze these for a quick breakfast or lunch on those busy days.<\/p>\n<p><a href=\"http:\/\/thehappyhousewife.com\/cooking\/files\/2012\/10\/photo-10.jpg\"><img decoding=\"async\" class=\"alignnone wp-image-22547\" title=\"breakfast sandwiches\" src=\"\/\/thehappyhousewife.com\/cooking\/files\/2012\/10\/photo-10-1024x764.jpg\" alt=\"\" width=\"498\" height=\"371\" \/><\/a><\/p>\n<h3><strong>Ingredients<\/strong><\/h3>\n<p><strong>Pancakes<\/strong><\/p>\n<ul>\n<li>3\/4 cup Hungry Jack\u00ae Complete Buttermilk Pancake &amp; Waffle Mix<\/li>\n<li>1\/3 cup water<\/li>\n<li>1\/4 cup Hungry Jack\u00ae Original Syrup<\/li>\n<li>1\/2 cup shredded sharp cheddar cheese<\/li>\n<li>1 cup frozen shredded hash brown potatoes, thawed, chopped into bite-sized pieces<\/li>\n<li>1\/4 tsp. salt<\/li>\n<li>4 (3-inch round) sausage patties*<\/li>\n<li>Crisco\u00ae Original No-Stick Cooking Spray<\/li>\n<\/ul>\n<p><strong>Eggs<\/strong><\/p>\n<ul>\n<li>1 tbsp. butter<\/li>\n<li>1\/3 cup diced red pepper<\/li>\n<li>4 large eggs<\/li>\n<li>1\/8 tsp. Salt<\/li>\n<\/ul>\n<h3><strong>Directions<\/strong><\/h3>\n<p><strong>Pancakes<\/strong><\/p>\n<ul>\n<li>HEAT griddle or skillet on medium heat (350\u00b0F.)<\/li>\n<li>WHISK pancake mix, water and syrup in medium bowl. Stir in cheese, potatoes and 1\/4 teaspoon\u00a0salt. Cook sausage patties as directed on package.<\/li>\n<li>COAT griddle or skillet with no-stick cooking spray. Pour 2 tablespoons batter on griddle, spreading\u00a0batter to make a 3-inch circle or by using 3-inch pancake molds, coated with no-stick cooking spray.<\/li>\n<li>Repeat to make 7 more pancakes. Cook 2 minutes or until golden brown. Turn. Cook second side 2\u00a0minutes.<\/li>\n<\/ul>\n<p><strong>Eggs<\/strong><\/p>\n<ul>\n<li>MELT butter in large skillet. Add red pepper. Cook and stir about 1 minute. Whisk eggs and salt in\u00a0small bowl. Pour into skillet with peppers. Cook slightly, then shape into four 3-inch circles about the\u00a0same size as the pancakes and sausage.<\/li>\n<li>PLACE one pancake on plate. Top with egg, cooked sausage patty and another pancake to make\u00a0breakfast sandwich.
