Vacation Menu Plan
This week I am on vacation, so menu planning looks a bit different. We are staying with family, which means that I will be doing some cooking, but the responsibility will be split between my mother and I. We are also spending some time at other family and friends’ houses so I want to be flexible and not over purchase food. To complicate things (or make them easier depending on what type of person you are) my parents are getting ready to move and they want to use up much of the food they already have in their house.
I looked through my mother’s pantry and came up with the following meals. I am not assigning them a day of the week since we haven’t finalized our plans for the week. This will allow me to shop for the needed food today.
Breakfast- pancakes, French toast, cereal, bagels
Lunch- Sandwiches, leftovers
Dinner-
Salisbury Steak
Mexican Lasagna
Pizza
Mexican Lasagna (I’ll try and post pictures this week after I make it)
1 lb ground beef
2 cans tomato sauce
1 can black beans, drained and rinsed
1 can corn
2 tablespoons chili powder
2 tablespoons minced onion
1 teas cumin
1 teas garlic
flour tortillas (between 6 and 8 of the large ones)
2 cups shredded cheddar cheese
Brown the ground beef. Rinse and drain. Add tomato sauce, beans and corn. Stir in seasonings and bring to a boil. Reduce heat and simmer for about 15 minutes.
In a 2 quart baking dish, coated with nonstick cooking spray, place 3 tortillas at the bottom. Layer with chili mixture and then cheese. Repeat. Bake covered for 30 minutes @ 350 degrees. Uncover the last 5 minutes of baking.

I am getting ready to move as well–doing the same thing your mother is doing–using up foods I don’t want to move but can’t give away. Lots of leftover baking supplies are getting a workout!
