When I started the pantry challenge my pantry was about half full, now it is getting pretty empty. It was challenging last week coming up with creative meals that didn’t taste like a bunch of leftovers thrown into a pot.
Here is my edited pantry list:
This will probably be the last week that I can participate in the challenge, as we are running out of food and it was never my intention to starve my family. I have enjoyed the challenge and definitely enjoyed the grocery savings.
So far our total spent on groceries for the month is $140. My plan was to continue to shop the sales, but they have been pretty slim around here, hopefully they will pick up next week.
Highlights from last week were skillet potatoes and leftover chicken and rice casserole.
Meals ~ Week of January 18, 2010
Breakfast
French Toast, Whole Wheat Pancakes, Whole Wheat Waffles, Eggs & Toast
Lunch
Sandwiches, Smoothies, Leftovers, Beans and Cornbread (I made so many beans that we are still able to eat this delicious and cheap meal.)
Dinner
Open tacos
served with vegetables
Sausage and Rice
served with mixed vegetables, whole wheat bread
Venison Stroganoff (no mushrooms)
served with noodles, peas, salad, carrots and ranch

served with applesauce, mixed vegetables, salad

I LOVE the idea of knowing what is in your pantry and actually using it up. I hope to use up a lot of my pantry items with “new” dinners this month as well. Your creations actually look quite delicious…you must have started with an awesome pantry!

here is something we are having this week and i see you have half a box of mashed potatoes in your pantry…
first, take chicken breasts and roll them in some melted butter
then, roll them in the potato flakes (you can add some salt and pepper to the flakes if you want)
bake in the oven either in a 9×13 pan or a cookie sheet at 350 for 30-45 minutes
potato baked crispy chicken…yum!

That stroganoff looks yummy. Venison is expensive around here but it tastes so nice and I wish I could afford to eat it more often.

The open face tacos look great. I never thought of making my own refired beans but I will definatly add that recipe to my list!

We’ve weeded out some old frozen ground pork (ragu alla bolognese), shrimp and andouille sausage (crockpot jambalaya – great new recipe), lots of chicken (whole chicken in crockpot, among other things), several pounds of bread flour, all the pasta (I had to buy new today), all the leftover Gatorade from Eagle Scout work days, every single can of tomato anything (pasta sauce, chili), all the frozen cooked beans (see all above recipes)…We have some older cans of things left, as well as a whole bunch of weird gifty foodie items, but we’re doing fairly well with the cleanout, I must say.
