Menu Week of May 3rd

We are overflowing with food this week! Saturday morning some friends from church surprised us with chicken adobo and sticky rice. It was great and everyone loved it. Then later that afternoon my neighbor came over with a huge box of bbq left over from a party. It looks delicious!

It’s Cinco de Mayo this week! Are you celebrating? We aren’t Mexican, but we love the food so we are having two Mexican meals this week!

Breakfast

Last week I decided to stay up when Cora woke up for her early feeding. This actually worked well because we were able to start school pretty early while she went back to sleep. I have been going to bed super early and so far it is working.

Cereal, Bagels, Pancakes, Oatmeal, Eggs

Lunch
The lunch meat has lost its luster. Actually the kids prefer meat and cheese without the bread. Since when did they decide to go on the Atkins diet?

Leftovers, Sandwiches, Crackers, Fruit, Smoothies

Dinner

Sunday -  BBQ, baked beans, corn bread, carrots and celery

Monday – Baked Salmon (recipe below), green beans, salad, corn, whole wheat French bread rolls

Tuesday – Cinco de Mayo! Shredded beef tacos, chips, guacamole, I am considering trying fried ice cream, has anyone done this before?

Wednesday – Mexican Chicken Skillet (a great way to use up your Mexican leftovers!)

Thursday – Chicken and rice casserole, green beans, fruit salad

Friday – Pizza with whole wheat crust

Baked Salmon

We are trying to incorporate more fish into our diet. I would love to try fish tacos one week, but for now I am sticking to what I know and that is salmon. The kids love it and it is so good for you! This is a new recipe, so I might modify it a bit, but I will let you know how it turns out.

  • 2 teaspoons minced garlic
  • 6 tablespoons light olive oil
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh parsley, chopped
  • 2 (6 ounce) fillets salmon

Mix ingredients together (minus the salmon) to create a marinade. You can remove the skin from the salmon or leave it, I have heard it has less of a fishy taste without the skin, but I don’t notice a difference.Coat salmon and marinate for at least an hour, turn the salmon once. Wrap the salmon in foil and bake in a 350 degree oven for 45 minutes or until the salmon flakes with a fork.

Fried ice cream is so fun! I suggest a double coating of cornflakes (freeze in between) and have your bowls ready as it melts quickly. I have used cinnamon flavored Total cereal crushed instead of corn flakes. I also have a recipe that calls for graham cracker crumbs instead, but I have not tried it yet. Chocolate sauce is also good on top!

We tried this recipe last week for the same reason, trying to get more fish in our diet. The kids loved it and so did my Mom and Husband. The flavors are nice and the fish is mild. It would be a good one to try.

fried ice cream sound so fun! I’ve wanted to try it, but I don’t have a deep fryer and am a little nervous of frying without one!

WE’re going to have Mexican for Cinco de Mayo, too. Be super careful with the fried ice cream as my SIL tried it one time and it exploded. Ugh! I think it needs to be super cold. Have fun! Can’t wait to hear if you try it!

Fried ice cream is great! Make sure it is rock hard frozen and you shouldn’t have any trouble. Now my kids are clamoring for me to make it!

My oldest sometimes dosen;t want the bread either so I did what my dad did when we were younger & trying to stretch a buck. Works best w/ rectangle lunchmeat. Place the meat on a plate with a slice of cheese on top, roll from end to end & secure w/ 3 toothpicks. Cut into thirds. We call them meat roll ups. You can also be fancy & use a tortilla too.

In one of the Top Secret Recipes Cookbooks, there is a recipe for fried ice cream where you just roll the ball of ice cream in crushed cornflakes and freeze it. Then you serve it on a fried tortilla with a cinnamon sauce. So it’s “mock” fried – and delicious.

I have tried “unfried fried ice cream” and it is yummy. Basically you roll vanilla ice cream in Honey Bunches of Oats cereal and then drizzle it with honey. It is so good and it’s alot easier! :)

I’ve had fried ice cream before with Cinnamon Toast Crunch on the outside and it was so good. I found this recipe and I’m definitely going to try it.
