Menu Plan Week of June 2nd
This week we will be going to the homeschool convention. My mother-in-law will be watching the kids so I am making meals ahead of time and putting them in the freezer. I plan to shop on Monday night and cook on Tuesday for the week.
Breakfasts – Waffles, pancakes, cereal, French toast
Lunch- Sandwiches, muffins, smoothies, cut up fruit and veggies
Dinner
Monday- Open tacos, black bean soup, cornbread
Tuesday- Spaghetti and meatballs
Wednesday - Family visiting from out of town, going out to eat.
Thursday - Salisbury Steak* (This is a great recipe for those who do not like mushrooms!)
2 pounds ground beef
1 package Lipton’s French Onion Soup Mix
1/2 cup bread crumbs
1 egg
1 can beef gravy
16 oz sour cream
1 beef bullion cube
1 package egg noodles or rice
Make hamburger patties using ground beef, bread crumbs, egg and soup mix. Fry or grill until cooked through. While hamburgers are cooking mix together in a bowl gravy, sour cream and bullion cube. Spray a 9 x 13 pan with nonstick and lay cooked patties in the pan. Cover the patties with the sour cream mixture. Bake covered for 25 minutes @ 350 degrees. Serve with egg noodles or rice.
Friday – Shepherd’s Pie* (so easy and freezes great, also an excellent way to use leftover mashed potatoes)
Ingredients
2 lbs ground turkey
1/2 cup chopped onion
Garlic powder
1 can cream of potato soup
1 small bag frozen corn
Mashed potatoes (enough to cover a 9 x 13 pan)
Grated Cheese (cheddar, colby, jack… your choice)
Brown turkey on stove top, add onions during the last 3 minutes of cooking, I also season with some garlic powder. Mix turkey and onions with the cream soup. Spray a 9 x 13 pan with nonstick, then spread the turkey mixture in the bottom of the pan. The layer the corn on top of the turkey, finally spread the mashed potatoes on top of the corn. Bake covered for about 25 minutes @ 350 degrees. During the last 5 minutes of cooking uncover the casserole and sprinkle with grated cheese.
