Menu Plan Week of July 7th

We just returned from our weekend trip, we had a great time, ate way too much food, and stayed up way too late! We are supposed to go out of town again this weekend, if we can recover from our last trip!

Lunch—Sandwiches, muffins, smoothies, leftovers, cut up fruit and veggies
Dinner
Monday- Leftover from last week for the kids, adults going out.
Tuesday- Baked Chicken, rice, corn, salad
Wednesday- Spaghetti with meat sauce, salad, whole wheat French bread
Thursday-Salmon Cake Sandwiches, fruit,
Friday- Pizza
Yummy Chicken Legs
- Chicken legs
- 4 Tbs melter butter
Mixed together in a bowl
- 3/4 cup bread crumbs
- 1/4 cup parmesan cheese
- 1 teas paprika
- 1 teas garlic powder
- salt and pepper to your liking
Remove skin from chicken legs
Melt butter/ then dip the chicken legs in the melted butter
Then roll the legs in the bread crumb mixture
Baked in a greased pan for an hour @ 350 degrees
These are delicious and a huge hit with the kids.
Salmon Cake Sandwiches
- Two cans boneless, skinless salmon, drained
- 3/4 cup chopped onion
- 3 eggs
- 1 cup bread crumbs
- 1/2 cup mayonnaise (you can use low fat)
- 4 teasp Worcestershire sauce
- 1/2 teasp black pepper
- 1 teasp salt
I beat the eggs first, then take all the ingredients and mix together in a bowl. You might need to adjust the amount of bread crumbs a little to make sure you can form the patties.
Form the mixture into eight patties (similar to hamburgers)
On medium heat coat a frying pan with vegetable oil, then melt 2 tablespoons of butter in the pan.
Fry your salmon patties for about 4 minutes on each side until they are a beautiful golden color.
Set on a paper towel to blot any extra oil.
Serve on a bun with your choice of toppings. We like lettuce and mayo at our house.

It’s been a long time since I’ve bought drumsticks because DH claims he won’t eat them…but those look fantastic and I think I’m willing to take the chance!

I am going for the salmon cake sandwiches this week, something totally different! I do end up having salmon at least every other week so this will be a nice change. Thanks for the recipe!
