Our week has started with this
Menu Plan Monday ~ The Good, the Bad and the Week of Easy Meals

Due to a freak hide and seek accident my daughter, and number one right hand gal is now my left hand gal. Her right arm is in a splint and sling until we visit the orthopedic clinic later this week to determine if it is broken. (This is not an actual picture of my daughter, she is pretty banged up so I didn’t want to put that picture all over the internet.)

This unfortunate incident  overshadowed the happiness I felt when my husband brought this home from a recent trip.

This Belgian Waffle MakerMenu Plan Monday ~ The Good, the Bad and the Week of Easy Meals has been on my wish list for months, if not years. The best part about this waffle maker is that it was free. My husband bought it with hotel points from his trip! Our family loves waffles but my waffle maker was old and it took about 10 minutes per batch of waffles. My new waffle maker takes 3 minutes per waffle! I cannot wait to try out Lynn’s overnight waffle recipe.

With my #1 out of commission this week the recipes will be quick and easy.

Breakfast:

Whole wheat pancakes, Oatmeal, Cereal, Eggs and toast, Overnight Waffles

Lunch:

Sandwiches, Fruit, Veggies, Yogurt, Cheese and crackers, Smoothies

Dinner:

Salmon Turnovers (didn’t get to it last week)

Served with corn, seasonal fruit

Whole Wheat Pizza This easy and recipe can be made in the bread machine for a quick meal on busy nights.

Served with fresh pineapple and seasonal veggies

Baked Chicken Legs

Served with brown rice, green beans, and whole wheat bread

Yes, the Happy family is very competitive, lol! Seriously, if I told you how she did it you wouldn’t believe me, it is that weird, but let’s just say it involved a boat and cement.

So sorry about your daughters arm..I hope she heals quickly!!!

I have that waffle maker the story behind it is quite funny but I ended up getting it for free too as a gift from my sister…WE LOVE IT!!! I will have to try out that recipe..

Thanks for all the great meal ideas, we have been doing some overhauling lately on our grocery budget this stuff will help out tons!!!

Oh my, I am so sorry about your daughter’s arm. My son recently broke his on our church playground. He is in kindergarten, and through this tragedy we learned that he writes much better with his left hand than his right. Interesting!

Your menu sounds great. Whole wheat pizza is delicious!!!

Just read about your daughter’s arm. My daughter hurt her hand last week. The one she writes with. Pretty sure it was broken. After a week in a temporary cast, we saw the ortho dr. this morning and the the hand is fine. It will be stiff for a bit but nothing is broken. Thank ya Jesus! Gotta love miracles both big and small!

I have the same waffle maker. Love it! We have waffles at least once a week.

(Just a heads up – the manufacturer had some trouble with bad heating elements last year in the waffle makers with the fixed handle. There’s a manufacturer’s warranty – I sent them the old one and they mailed a new one out within the week.)

Looks like your family is going to have some terrific meals this week.
I love MPM especially since my husband and I lost our jobs. I’m looking for inexpensive and healthy meals for our family of three.
