I’m Menu Planning Again….

Now that I can smell food again, I decided it was time to get back on track with a menu plan. Along with my menu plan I have a question. My kids are a rebellious lot who have decided they don’t like sandwiches anymore. Personally, I can’t stand lunch because it breaks up our school day and we always seem to get off track. Sandwiches are quick and easy and don’t require a lot of clean-up. I am curious, what does your family eat for lunch? I grew up on sandwiches so I don’t have a lot of pity for my kids who now claim to hate them. What would you do, make them eat sandwiches or vary the menu?

Here is our menu for the week of November 2nd.

Monday

Breakfast -Oatmeal, Cereal

Lunch- Sandwiches, Fruit

Dinner-Pasta, Breadsticks, Salad

Tuesday

Breakfast -Biscuits (I made biscuits for the first time last week and my kids loved them, with syrup?)

Lunch- Soup, Sandwiches, Fruit

Dinner- chicken legs (recipe below), rice, broccoli, corn

Wednesday

Breakfast – Bagels

Lunch – Smoothies, crackers, cheese, peanut butter

Dinner – (last soccer practice) Ravioli, leftovers

Thursday

Breakfast -French Toast

Lunch – Sandwiches, Fruit

Dinner -Salmon Cake Sandwiches, fruit, pierogies, macaroni and cheese

Friday

Breakfast- Waffles

Lunch- Sandwiches, Fruit

Dinner- Pizza

Yummy Chicken Legs

  • Chicken legs
  • 4 Tbs melter butter

Mixed together in a bowl

  • 3/4 cup bread crumbs
  • 1/4 cup parmesan cheese
  • 1 teas paprika
  • 1 teas garlic powder
  • salt and pepper to your liking

Remove skin from chicken legs

Im Menu Planning Again....


Melt butter/ then dip the chicken legs in the melted butter

Im Menu Planning Again....


Then roll the legs in the bread crumb mixture

Im Menu Planning Again....


Baked in a greased pan for an hour @ 350 degrees

These are delicious and a huge hit with the kids.

I have worked in a kindergarten in the past and saw some great lunch ideas. Here are a few – dip & vegies, sushi, boiled egg & toast, wraps, rolled ham, celery & peanut butter or cream cheese, homemade pizza. Hope these help.

What if you served the sandwich fixings “a la carte”. My oldest doesn’t like sandwiches unless it is peanut butter and honey. Otherwise she gets sliced turkey on her plate, cheese in another spot, maybe apples, carrots with ranch and some crackers. A deconstructed sandwich.

Glad to hear that you’re feeling better! How was the camping trip?

As for the lunches…they’re not my fave either. I usually cook an extra big breakfast and eat it again for lunch or eat leftovers from dinner. I’m not a big fan of sandwiches so I often toast my bread and then make a sandwich…somehow that seems to make things better. I dislike P, B, & J so I’ll make toast and put jelly on it and eat a spoon full of peanut butter…weird, but that’s what works for me.

Ultimately, I would echo J.C. Ryle in saying train them in the way they should go…not the way that they would go. It’s wise of you to consider their interests to some extent, but don’t cater to them too much. I know you’ve got way more experience in all that than I do, and I’m sure you’re doing just fine…just a reminder.

We do open taco’s, quesadillas, soup, leftover’s, pizza on ready made crust…and sandwiches. I know what you mean about it breaking up the school day….but we take an hour lunch break and that is usually plenty of time to cook, eat and clean up…with some free time for the kids before they get back to work.

I typed a huge message and then received and error! Agh! I’ll try again. Try making things like calzones ahead and freezing them. I also make (and freeze) corny dog muffins (basically corn muffins with 4 sliced hot dogs and a cup of cheese added). Another idea is pizza kabobs – put turkey pepperoni and mozerella balls or cubes on toothpicks and dip in bottled sauce. Unfortunately, I couldn’t eat a sandwich every day either, so I know where your kids are coming from.

Well, you may not like my ideas because many are store-bought, processed foods, but I’m all about easy! So we have frozen pizza, pizza rolls, nachos and cheese, chicken nuggets, mac and cheese, or leftovers. I also buy Banquet meals when they are on sale for $1 each and the kids often have those.

Oh yum those chicken legs look so good. I love chicken legs, but my fam hates them (my dh to be exact), so I never cook them. It is always chicken breasts for us.

I make my kids eat canned stuff and sandwiches for supper. (We eat our big meal at lunch time cuz my dh works evenings) and they complain, but I don’t care.

They also complain about brushing their teeth, cleaning their rooms, waking up in the mornings. Its a kid thing. Which I have gotten very good at ignoring ;) haha

We are real busy this week, so my dh told me not to even bother with a menu. We won’t be at home most of the time.

Hi,
How about hot dogs, english muffin pizzas, cracker stackers(sandwich fixins on crackers), canned soup w/crackers, bean burritos, mac n cheese?

My kids go to school, and bring lunch. They get tired of sandwiches too…so would I. They love cold pizza in their lunchboxes, or homemade “lunchables”…

We eat a lot of sandwiches for lunch, but I also try to make a big batch of freezer food to pop in the microwave: pigs in a blanket, brown bag burritos, bierocks, pizza pockets, etc.

Quesadillas (black bean and cheese) are also quick and easy. We’re able to eat leftovers, too, but I can’t imagine that you HAVE many leftovers with your crew!

My kids like anything in a tortilla, so sometimes their turkey and cheese sandwich gets rolled up into a “turkey taco” or turkey melt.

They also love anything that they can dip. I try to keep fresh cut veggies and ranch dip, and fruit and dip handy.

We do lots of sandwiches too, but my 2-year old never eats the bread so we’ve gotten to the point where we make ham and cheese sandwiches for the rest of us and just give her ham and cheese slices. It seems to work. We also do lots of dinner leftovers at lunch time. Another favorite is grilled cheese sandwiches with tomato soup. Good luck!

First of all, I would like to say that that chicken recipe looks so good. I think that I am going to have to try that sometime soon. Like you, I grew up on sandwiches and soup, and I loved it. I never got tired of it. Maybe to switch things up, you could try a baked potato bar and have all different types of toppings for it. How about a salad bar with different toppings as well. Taco bars are popular in my house too. Quesadillas are quick, fast and yummy. And if all else fails, leftovers! :)

I often put out all the leftover foods we have and let them pick what they want to microwave. I also used to make large casseroles (when we had 7 kids at home) and there was always enough left for the next day. Now, I save even small amounts of food (2 girls left at home) in bowls, etc. so they can have those each day. If there is nothing left, I fill in with Costco corn dogs, tomato soup, etc. A few days ago I boiled a whole packet of noodles for spaghetti pie, made 2 a couple of days ago, and today they (plus 3 friends) finished up the leftovers with 2 kinds of leftover cheese sprinkled on top. I don’t like to spend much time on lunch, either, it’s back to school as soon as possible so we can finish with a little free time!

Chicken legs are a new favorite around here. We usually grill them after marinating them in Balsamic vinegar & spices. You cannot beat the price!

We are having chicken legs this week, too. They are a family favorite. :-)

As far as lunches, my kids aren’t big on sanwiches unless they are pbj’s and I just won’t let them eat those everyday. So we do lots of fruit, cheese, veggies sticks & dip. Hard boiled eggs and turkey bacon are popular, too.
