Sweet Potato Tuna Burger

Several months ago I did a 24 day cleanse. I didn’t actually make it through the full 24 days, but one thing I did like about it was increasing the fruits and vegetables in my diet.The folks at Triscuit want to encourage you to incorporate more real foods into your life. With their new line of crackers that include ingredients like brown rice, beans, and sweet potatoes it makes snacking on real foods even easier.

I was challenged by Triscuit to create a recipe inspired by the real foods used in their new crackers.

A while back I made sweet potato tuna burgers and hesitated sharing them on the site because when I found the original recipe I thought- sweet potato and tuna? Gross! But I changed up the recipe a ton they were delicious. Since they are chock full of sweet potatoes they are perfect for this challenge!

So if the combination scares you, like it did me- don’t let it! You’ll really like these burgers. I served mine on a bed of lettuce, but you could also serve them in a lettuce wrap or on a bun.

You could also make mini burgers and serve them on the new Triscuit Brown Rice and Sweet Potato cracker, so delicious!

Sweet Potato Tuna Burger

Sweet Potato Tuna Burger
Recipe type: Main Dish
 
Ingredients
  • Two medium sweet potatoes cooked and mashed.
  • Two 7oz cans of tuna packed in water
  • A teaspoon minced garlic
  • ¼ cup diced red onions
  • Two green onions chopped
  • ¼ cup parsley chopped
  • 1 teaspoon paprika
  • Salt and pepper
  • 2 tablespoons of olive oil
Instructions
  1. Mix together all ingredients except olive oil.
  2. Shape into patties.
  3. Fry in olive oil in a skillet on medium heat 2-3 minutes per side.
  4. Serve.
