Roasted Potatoes

Roasted Potatoes

  • 1/8 cup olive oil
  • 1 tablespoon minced garlic
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried marjoram
  • 1/2 teaspoon dried dill weed
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon crushed red pepper flakes
  • 1/2 teaspoon salt
  • Red potatoes, washed and quartered
  • Preheat oven to 400 degrees.

    Take all ingredients except potatoes and mix in a bowl. Coat potatoes with the mixture and place in a shallow pan. I used a slotted spoon to remove the potatoes so I didn’ t have pools of oil in my pan.

    Bake for 20 minutes turning occasionally and serve.

      My DH has prepared red potatoes in a similar fashion… he does them in a pot on top of the stove. He slices the potaoes, put them in a pot of water brings them to a boil (not long) probably just till they are heated all the way through, drains, then adds olive oil (or butter) and his spices… You are right they are yummy!

      You can never go wrong with potatoes! The red pepper flakes are a nice addition.
