Menu Plan Week of September 27th

Car repairs and other unexpected events turned last week upside down. Most nights we settled for sandwiches or toasted pita bread with fruit because there was no time for a real meal. We have lots of carry-overs from last week.

What we are eating this week:

Breakfast:

Whole wheat pancakes, Oatmeal, French Toast, Eggs and toast

Lunch:

Sandwiches, Fruit, Veggies, Yogurt, Cheese and crackers, Smoothies

Dinner:

Spaghetti Squash Spaghetti (recipe coming later this week)

Served with whole wheat bread and broccoli

Salmon Turnovers

Served with corn, seasonal fruit

Whole Wheat Pizza This easy and recipe can be made in the bread machine for a quick meal on busy nights.

Served with fresh pineapple and seasonal veggies

Baked Chicken Legs (If it is too warm, I’ll grill them instead)

Served with brown rice, green beans, and whole wheat bread

Tuna Noodle Casserole This meal can be made the night before and kept in the fridge. It actually tastes better the second day.

    My family loves salmon, and I have a bunch of cans in the pantry (on a good sale a while back!) — I’ll have to give this one a try.

    Our kids love pizza night. It’s on our weekly menu almost every week. We have seven kids like you do so we don’t order pizza out because it gets too expensive. My husband’s sauce is better than anything you can buy anyway.

    The salmon turnovers sound good. I always make tuna turnover, but that sounds like a nice change.

    I have bookmarked your tuna casserole recipe. I haven’t made a tuna casserole in years. Menu Plan Monday is giving me so many good ideas!

    The Tuna Noodle Casserole looks good. My husband is not a fan of casseroles or canned cream of anything soup, but I might just have to make this since I think I will like it, and it would be nice to try something like this on my kids since my older son in particular is pretty picky.

    Those salmon turnovers are delicious, they are going back into my 30 meal rotation for fall/winter. My ten year old can even learned to help with that recipe. I will have to stock up on the canned salmon at Sam’s club :)
