		<description>I know this post is a few days late. I have so much going right now there&#039;s not a lot of time to visit blogs. ~sigh but as is life!

We are trying to use up what we have in the freezer as well. I can&#039;t believe that I have 4 boneless pork loins in there. Geesh. Talk about over board! And so much chicken,it&#039;s time for me to get creative,how many ways to make chicken before my children kick me out of the kitchen. We shall see!

		<description>Great looking menu!  The scallops look divine!  We&#039;ve had your roasted potatoes twice already and they scramble to get all of them. LOL!  That is going to continue to be a regular side dish for us.  We are also having your chicken tetrazzini this week. :D</description>

Here&#039;s my easiest chicken recipe ever:

Italian Crock-pot Chicken

Take however many chicken breasts you need. Place frozen in crock-pot.  Cover with Italian salad dressing &amp; a chopped onion.  For a family your size, depending on the number of breasts being done, maybe 2 salad dressings &amp; 2 onions. 

I do use the packets of dressing you make yourself in cruets.  However, when making for this recipe I go a tad heavier on the vinegar &amp; only use 1/2-3/4 of the oil.  

This meat falls apart &amp; makes awesome chicken salad the next day.  On the rare occasion there is any left.  The juices from cooking that are left over also make a decent gravy or topping for rice.
