We have an upright freezer in our garage. I rarely open it because walking through our garage is like running an obstacle course. I was a bit surprised a few weeks ago when I went out there and found all the shelves completely covered in ice. It is time to defrost the freezer, but first I have to do something with all the food. There are several packs of ground beef, a package of chicken, and a bag of giant scallops (yum!). I will attempt to use up the food over the next two weeks so I don’t have to mess with a cooler when we clean out the freezer.
Breakfast- cereal, pancakes, French toast, eggs, pop tarts (lol)
Lunch- honest to goodness I wish lunch didn’t exist! It is such an interruption to our day. But the kids get hungry regardless of how I feel about lunch so I need to plan something. Sandwiches, smoothies, fruit, and carrot sticks are probably the easiest meals I can think of right now.
Dinner-
Mel’s Potato Soup, whole wheat bread, carrot sticks (I am going to experiment and add some pureed cauliflower to the soup to see if I can taste it, I am not a big fan of cauliflower so this should be interesting)
Blackened Scallops with Asiago Cream Sauce, Caesar salad, french bread
Hamburgers, hot dogs, baked beans, corn on the cob, applesauce
Baked Ziti, salad, green beans, bread
Chicken… still deciding on exactly what to make but I have a package of boneless skinless breasts I need to use.
I am too lazy to head out to my garage to get a picture of my freezer tonight, but I will get one tomorrow and post some before and after pictures on next week’s menu plan post.

Cleaning out always feels great — especially after you’re done!!
I have two chicken recipes I can recommend to you… Smothered Chicken (think: bacon, cheese and honey mustard) and Mozzarella Mushroom Chicken.
We eat plenty of chicken breasts around here. Here are some ideas:
grilled chicken sandwiches topped w/melted cheese, lettuce, and tomato
use it in a skillet meal
skillet chicken parmesian
grilled chicken Caesar salad
italian chicken
BBQ’d chicken
I have a great chicken chili recipe, real easy and good! can of salsa- shredded chicken cooked-2 cans navy beans- bag of monterey jack cheese and put all in crock pot 8 hours low! The whole house will smell wonderful and it tastes great.
lol you had to know the chicken comment would get you some, okay a lot, of ideas.
We just had chicken fried rice for dinner. Dinner for 7 under $5!
2 boxes of flavored rice a roni – $1.40 (on sale)
Chicken $(who knows it was in the freezer)
Eggs $2 but really free from friends chicken
mixed frozen vegies or peas $1

Here’s my easiest chicken recipe ever:
Italian Crock-pot Chicken
Take however many chicken breasts you need. Place frozen in crock-pot. Cover with Italian salad dressing & a chopped onion. For a family your size, depending on the number of breasts being done, maybe 2 salad dressings & 2 onions.
I do use the packets of dressing you make yourself in cruets. However, when making for this recipe I go a tad heavier on the vinegar & only use 1/2-3/4 of the oil.
This meat falls apart & makes awesome chicken salad the next day. On the rare occasion there is any left. The juices from cooking that are left over also make a decent gravy or topping for rice.

Great looking menu! The scallops look divine! We’ve had your roasted potatoes twice already and they scramble to get all of them. LOL! That is going to continue to be a regular side dish for us. We are also having your chicken tetrazzini this week.
We tried to hide the cauliflower in macaroni and cheese and it was VERY obvious! Yuck! Even my 4 yo refused to eat it. I even used sharp cheddar to try and help disguise it better but…
I was wondering if you could answer a question about the multi-cooker you use for your baked ziti recipe. Can you use both the strainer and the steamer inserts at the same time? i.e. cook spaghetti and steam brocolli over it?
I know this post is a few days late. I have so much going right now there’s not a lot of time to visit blogs. ~sigh but as is life!
We are trying to use up what we have in the freezer as well. I can’t believe that I have 4 boneless pork loins in there. Geesh. Talk about over board! And so much chicken,it’s time for me to get creative,how many ways to make chicken before my children kick me out of the kitchen. We shall see!
