For the next 30 days I’m challenging my family and yours to eat at home. Our family “officially” started the challenge last Tuesday but you can join in whenever you want! We are purchasing a 1/4 of a cow (more on that later) and are trying to cut our eating out budget to pay for the bulk meat. So far so good for our family.
Tomorrow is Father’s Day and we normally do not eat out on these types of holidays. The restaurants are super crowded and we’d rather take our big family out when we can use a coupon or kids eat free. Instead of eating out for Father’s Day try making one of dad’s favorite meals at home!
I cooked up a whole chicken in the crock pot today to use in meals this week. Even if you can cook a little extra on the weekends you’ll find that dinners during the week are so much easier!

What a gorgeous picture of breakfast!! I’m not a fan of eggs, but I’d be tempted if mine looked like that.
Ahhh that’s easy for me. we pretty much always eat in. It’s a special thing for us to eat out
The Mexican Chicken Skillet looks delish. Do you have a recipe or do you just eyeball it?
I’m drooling!
I am totally on board with the eat at home challenge – it’s exactly what my family needs! I will be following your journey for inspiration. I love how organised you meal plan is – this really is going to be the secret to staying on track with not eating out.
I make a Mexican Chicken dish in the crockpot and it is FANTASTIC. You put black beans, corn, salsa and chicken in the crockpot and serve over rice. So easy and SO GOOD!
You cook the best food! You really inspire me! Thank you. I also have a large family – 6 kids – and a very limited budget, so thanks to you, I have great recipes for baking my own pita bread, tortillas, bagels, english muffins, bread etc. I was curious, though, do you have a good all-purpose bread recipe that doesn’t require sifting? I have a mill grinder (just like yours – thanks for the tip!) and your same breadmaker (absolutely love it – couldn’t live without it!), but am having a hard time with a good bread recipe. Sifting my flour is way too time-consuming and messy. I do have vital wheat gluten and homemade dough enhancer. Any suggestions?
We’ll be eating at home too… I’ve been meaning to attempt english muffins but haven’t quite worked up the nerve yet. Yours look great!
YUm! Great looking menu! I need to make your English muffins again. They always turn out great!
Our challenge starts July 1st!
your menu looks great. id love to make english muffins. and i definately want that egg dish!
i’d love if you checked out my Menu Plan for this week
