Menu Plan/ Budget Update

Thanks to a sick baby and getting sick myself, I came in way under budget this month! My goal was $540 and I have spent $402. I will need to buy milk tomorrow, but that’s it. My budget challenge was helped by the box of free vegetables and eggs I received from a friend, plus not being able to leave the house saved me a lot of money. Later this week I’ll share some practical ways you can cut your grocery budget and not starve your family.

    mmmm, you’ve just reminded me I need to make mexican chicken skillet again sometime soon. We substitute the black beans for either kidney beans or 5-bean mix, and it’s a big hit over here.

    Toni, we make salsa chicken it’s a recipe I got from the sparkpeople website, it’s super easy and delicious…
    chicken breast, taco seasoning, a jar of salsa in the crock pot for 6 hours, take out chicken and shred it add it back to the pot, there you have a really good dinner, we usually do black beans, rice and all the taco fixins some of us use chips and some will do tortillas.

    Our kids like Chili’s but drinks could cost your a fortune with that many kids. Right now our kids favorite place to eat is Cracker Barrell.

    If you add black beans and frozen corn to the salsa chicken ingredients, you have a one-pot meal…just add tortillas. I use about 2 cups of black beans and a cup of corn for one meal (4 chicken breasts – I put them in frozen, too). Yum!
