When it comes to breakfast I love quick and easy recipes. If the recipe can be made ahead of time and kept in the freezer, I like it even better.
Today’s recipe is for a simple muffin that my family loves for breakfast. It is pretty healthy and since it contains oats it is a little heartier than your average muffin. You could make this even healthier by using part whole wheat flour.
I love to make a big batch of these and freeze them for those mornings when we need a really quick and easy breakfast.
Ingredients
- 1/2 cup butter
- 3/4 cup brown sugar
- 1 egg
- 1 cup flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup applesauce
- 1 cup quick cooking oats ( You can use old fashioned oats, but the texture will be different.)
- 1 cup raisins
- 1 teaspoon cinnamon
Instructions
- In a bowl, cream the butter and sugar.
- Beat in the egg.
- Add the dry ingredients, oats, and applesauce, and stir just until combined.
- Stir in the raisins and cinnamon.
- Scoop the batter into greased or paper lined muffin tins, filling cups about 3/4 full.
- Bake at 350 degrees for 22 minutes.













What can you use besides applesauce? My child is allergic to apples.
Hi there! I just wanted to share that I had been wanting to find a somewhat healthy muffin recipe to bake to bring to my friends’ house when we met for coffee this week. I came across this recipe yesterday. Made them today to bring to my lovely friend’s house. They went great with a steaming cup of coffee! Thanks for sharing!~
I just made some applesauce so now I’ll make these.
How many does it make and do you have calories or fat per muffin. I will definitely try them.
