Mexican Street Corn Dip
Serves: 3 - 4
 
Ingredients
  • 2 cups corn
  • Drizzle of olive oil
  • 1 tablespoon garlic powder
  • Salt and pepper to taste
  • ½ cup sour cream
  • ¼ cup chopped parsley
  • ¼ cup chopped green onions
  • 1 tablespoon chili powder
Instructions
  1. In a skillet over medium heat, add the corn, olive oil, garlic powder, salt, and pepper. Cook for 10 minutes and stir occasionally.
  2. Remove from heat and add the sour cream, parsley, green onions, and chili powder. Mix well.
  3. Serve with tortilla chips and enjoy.
Notes
Add some chopped chilies to take it to the next spicy level.

Your family will love these Baked Parmesan Potato Fries. They’re easy to make and are healthier than regular fries because they’re baked. Try switching up the seasoning to use flavors that your family enjoys (Old Bay would be good!).

Baked Parmesan Potato Fries
Serves: 6
 
Ingredients
  • 6 large russet potatoes
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1½ tablespoons salt
  • 1 teaspoon white pepper
  • 1 teaspoon onion powder
Instructions
  1. Preheat oven to 400° F and lightly coat a baking dish with non-stick spray.
  2. Slice all potatoes lengthwise into 6 wedges and place them in the baking dish.
  3. Add Parmesan cheese, oil, and spices to the potatoes and gently mix.
  4. Cover with foil and bake for 30 minutes then toss fries and bake for another 30 minutes.
  5. Serve and enjoy.
Notes
Add ½ piece of crushed garlic for a light pungent and spicy taste.

Sweet Potato and Turkey Chili
Serves: 2 - 3
 
Ingredients
  • ¼ cup chopped onion
  • 1 garlic clove, minced
  • 1 teaspoon oregano
  • 1 teaspoon cumin
  • 1 tablespoon chili powder
  • 1 tablespoon salt
  • 1 pound ground turkey
  • ½ cup cooked pinto beans
  • 1 carrot, shredded
  • ¼ cup diced tomatoes
  • 1 sweet potato, cooked
  • 2 cilantro sprigs to garnish
Instructions
  1. Combine the onion, garlic, and all seasonings. Sauté mix in a large sauce pan.
  2. Add in the turkey. When it starts browning, add in the pinto beans.
  3. Turn heat down and add in the carrots and tomatoes. Let simmer for 25 minutes.
  4. Cut one half of the sweet potato into cubes and cut the other half into spirals. Place on top of chili along with cilantro sprigs to garnish.

Chocolate Cake Doughnuts
Serves: 12
 
Ingredients
For the donuts
  • 3 cups all-purpose flour
  • ½ cup cocoa powder
  • 1 ½ tablespoons baking powder
  • 1 teaspoon salt
  • 1½ cups sugar
  • 2 ½ tablespoons warm butter
  • 4 large eggs
  • 1 cup water
  • 1½ cups sour cream
  • 2 cups oil for frying
  • Chocolate shavings for garnishing
For the glaze
  • 1 cups milk
  • ½ cup powdered sugar
  • 2 teaspoons salt
  • ½ cup melted chocolate
Instructions
  1. Mix the flour, cocoa powder, and baking powder together. Whisk in the salt and sift.
  2. In a separate bowl, beat together the sugar, butter, and eggs on high speed for 2 - 3 minutes.
  3. Add in the sour cream and water and continue mixing on medium speed until well blended and smooth.
  4. Slowly add in the dry ingredients and mix until fully incorporated.
  5. Cut a large piece of plastic wrap. Transfer the dough to the plastic wrap, cover, and refrigerate for one hour.
  6. Lightly dust a work surface with flour. Place the dough on the floured surface and roll it out ½ inch thick.
  7. Use a round 3-inch cookie cutter to cut the doughnuts and a ¼ inch cutter to make the holes. Place the doughnuts on a 16-inch cookie sheet. Cover and refrigerate for another 30 minutes.
  8. Pour oil into a deep fryer and heat to 360 degrees.
  9. Place 2 - 3 donuts at a time in the fryer and cook until both sides are golden brown.
  10. In a small pot, whisk together the milk, powdered sugar and salt in a medium bowl. Add in the melted chocolate. Heat.
  11. Dip the tops of the donuts inside the glaze and garnish with extra chocolate shavings.
Notes
For a richer chocolate flavor substitute cocoa powder with fudge.
