Tomato & Black Bean Salsa

Tomato season has arrived in my garden, and my favorite way to celebrate is by making homemade Tomato &  Black Bean Salsa. But don’t limit this fresh salsa to tortilla chips. It also pairs well on top of grilled fish or chicken.

Tomato & Black Bean Salsa
Recipe type: Side Dish
 
Ingredients
  • 3 cups chopped fresh tomatoes
  • 1 bell pepper, any color, chopped
  • 1 small hot pepper, such as a jalapeno, chopped (optional)
  • 1 cup chopped red onions
  • 1 (15 ounce) can black beans, drained and rinsed
  • ¾ cup frozen corn, thawed or 1 ear cooked corn on the cob, cut corn off the cob
  • 3 garlic cloves, minced
  • juice of 1 lime
  • ¼ cup chopped fresh cilantro or parsley
  • salt and pepper to taste
Instructions
  1. Allow the tomatoes to drain in a colander while you prepare the other ingredients.
  2. Combine all of the ingredients together in a large bowl.
  3. Chill or eat immediately.
Notes
If the salsa has too much liquid from the tomatoes, pour the salsa through a strainer or colander.

Grilled Pineapple Chicken Kebabs

For a different variation of grilled chicken, try these Grilled Pineapple Chicken Kebabs. Grilling the pineapple brings out the fruit’s sweetness and it goes well with the vegetables and marinated chicken.

Serve the kebabs with rice and a large salad. If you have leftovers, use them to make wraps for the next day’s lunch or dinner.

 

Pineapple Chicken Kebabs
Recipe type: Main Dish
Serves: 6
 
Ingredients
  • 1 pound boneless, skinless chicken breast, cut evenly into bite-sized pieces
  • 1 bell pepper, cut into bite-sized pieces
  • 1 small red onion, cut into bite-sized pieces
  • 1 pineapple, cut into chunks
  • ¼ cup fresh orange juice
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 3 garlic cloves, minced
  • approximately 12 (12-inch) skewers, bamboo or metal
Instructions
  1. The chicken, pepper, onion, and pineapple should all be cut into bite-sized pieces, but still large enough to thread onto skewers.
  2. Place the chicken in a shallow bowl or pan. Combine the orange juice, soy sauce, oil, and garlic cloves and pour over the chicken. Make sure the chicken in completely coated. Place the chicken in the refrigerator and marinate for at least an hour or more.
  3. Pre-heat grill to medium.
  4. Place peppers and onions in a small bowl and drizzle lightly with olive oil.
  5. If using bamboo skewers, they need to soak in water for 30 minutes before using. Thread the chicken, peppers, onions, and pineapple onto skewers. Don't thread too tightly, leave some space between pieces so the food can cook evenly and properly.
  6. Place chicken skewers on grill and close lid. Cook for 5 minutes. Turn the skewers and grill for another 3-4 minutes or until chicken is cooked through.

When asparagus is in season, I take advantage of its peak flavor (and the low prices) and include it in many of our meals. This Lemony Asparagus Pasta takes less than 15 minutes to prepare, so it’s an easy dish on hectic weeknights.

It is great served warm or cold with grilled chicken or your favorite burger (find some burger ideas below the recipe).

Lemony Asparagus Pasta (h)

Lemony Asparagus Pasta
 
Ingredients
  • ¼ cup olive oil
  • half a red onion, chopped fine
  • 3 garlic cloves, minced
  • 1 pound asparagus, trimmed and chopped in 1 inch pieces
  • juice of one lemon
  • 1 (16 oz) box of farfalle (bow tie) pasta
  • Parmesan (optional)
Instructions
  1. Cook pasta per box instructions.
  2. In a large skillet, heat the olive oil on medium heat and saute the the onion, garlic and asparagus for about 5 minutes or until the asparagus is tender, but not over-cooked. The asparagus should be bright green and you should be able to pierce with a fork.
  3. Remove the asparagus from the heat and stir in the lemon juice..
  4. Combine the asparagus with the pasta.
  5. Top with Parmesan when serving.

Ranch dressing is a staple at my house. We use it for salads, raw vegetables, and our favorite wing recipes. I attribute ranch dressing to the reason my oldest daughter will sit and eat a plate full of raw vegetables, such as broccoli, cucumbers, carrots, and sweet peppers. She has rated my homemade version two thumbs up.

Homemade ranch dressing or dip is so easy to make and it tastes so much better than what comes out of a bottle. It stores in the fridge for up to a week, but mine never seems to last that long when I make it.

Don’t be afraid to buy fresh parsley or chives if they aren’t available in your garden yet. This recipe only calls for one tablespoon each, so you’ll have leftover herbs if you buy from a store, but they both freeze easily. Just wash and dry the herbs. Chop and store in a freezer bag. Take out what you need and put directly into any recipe.

Ingredients
  • ½ cup sour cream
  • ½ cup mayonnaise
  • ½ cup milk
  • 2 teaspoons lemon juice
  • 1 tablespoon finely chopped fresh parsley
  • 1 tablespoon finely chopped fresh chives
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon kosher salt
  • ¼ teaspoon ground pepper
Instructions
  1. Pour all of the ingredients into a mason jar or bowl and cover with a lid.
  2. Shake vigorously.
  3. Refrigerate for 1 hour or more so the flavors will blend together.
