This Lemon Garlic Tilapia dish is an easy weeknight meal that takes less than 30 minutes to prepare. Tilapia is a light fish that goes well with steamed vegetables and rice.

Lemon Garlic Tilapia

Ingredients

  • 4 tilapia filets
  • 4 tablespoons butter
  • 3 garlic cloves, minced
  • 2 tablespoons fresh lemon juice
  • salt & pepper to taste
  • chopped fresh parsley

Instructions

  1. Preheat oven to 400 degrees.
  2. Heat a small sauté pan over low heat.
  3. Add butter and melt.
  4. Add garlic and cook for 2 minutes while stirring continuously.
  5. Add lemon juice. Stir well.
  6. Remove from heat and set aside.
  7. Prepare a baking dish with non-stick spray.
  8. Place the tilapia in the dish and sprinkle with salt and pepper.
  9. Pour the lemon garlic sauce over the fish and bake for 20 minutes or until fish is white and flakes when poked with a fork.
  10. Top with fresh chopped parsley before serving.

Crunchy Roasted Chickpeas

Crunchy roasted chickpeas are an addictive snack that won’t leave you feeling guilty. Chickpeas are high in protein and dietary fiber, yet low in calories and fat. They are also inexpensive, especially if you cook dried beans yourself.

The key to crunchy chickpeas is to dry them well before you add the oil and spices. If they are wet, they will steam in the oven instead of roast. This recipe can easily be altered to your taste, so experiment with your favorite spices. It can also be doubled.

Ingredients

  • 1 (15.5 ounce) can chickpeas or garbanzo beans
  • 1 tablespoon olive oil
  • ¼ teaspoon garlic powder
  • ¼ teaspoon kosher salt
  • ¼ teaspoon ground pepper

Instructions

  1. Preheat oven to 400 degrees.
  2. Drain and rinse the chickpeas. Dry well using paper towels. Discard any loose skins.
  3. Put chickpeas in a small bowl and coat them evenly with the olive oil, garlic powder, salt, and pepper.
  4. Pour the chickpeas into a rimmed baking sheet. Bake for 45-50 minutes. Shake the pan several times throughout the baking. Towards the end of roasting, you want to check on the chickpeas often as they can burn quickly.
  5. Allow the chickpeas to cool in the pan after removing from the oven.

Notes

Spicy: Use 1 tablespoon olive oil, ½ teaspoon cumin, ½ teaspoon chili, pinch of cayenne, salt, and pepper. Honey Cinnamon: Use 1 tablespoon olive oil, ½ teaspoon cinnamon, and 1 tablespoon honey.
