3 Moms: Leftovers and Turkey Broth FAIL!

After a crazy weekend I feel like we are finally settling back into our routine. Monday and Tuesday my goal was to eat all the leftovers to clean out the fridge in preparation for my big shopping trip.

Monday

Breakfast was leftover pancakes, cereal, and oatmeal. Lunch was leftovers and sandwiches. Dinner was leftovers from our turkey dinner the night before as well as the remains of the pork roast from last week.

Tuesday

For breakfast I made whole wheat pancakes. Lunch was my final attempt to rid my fridge of the leftovers, we had turkey, nacho bake, apples, cantalope. My daughter also created a new (to us) meal of pancakes and peanut butter. That girl will eat anything with peanut butter!

During lunch I put the turkey carcass on the stove top to boil in order to get the rest of the meat off the bones and make broth. I also made a turkey pot pie for dinner. I was almost out of flour so the pie only had a top crust.

We also discovered this week that Cora likes stuffing.

I left for a grocery shopping trip and forgot to mention to anyone that the broth on the stove needed to be watched. A few hours later I called home and asked them to turn the stove off. When I returned home all the broth/ water had boiled off and all the turkey was burned into the pot! I was so disappointed! All that wasted broth and meat!

Dinner was turkey pot pie. Pot pie is a favorite at our house and there are never leftovers! This time I experimented and made a crust that was 50% whole wheat. I still have a really hard time rolling out a whole wheat crust, any suggestions?

I love serving pot pie because it is an all-in-one meal. Grains, meat, and veggies all in one dish!

  4. We are a big fan of pot pie in any variety. Love it! My goal is to try making a pie crust since I normally use the store kind.

    The boys love peanut butter banana quesadillas. Depending upon my mood, I’ve throw in jelly, granola, honey and wheatgerm.

    My five year old son eats waffles with peanut butter (and syrup) every single morning for breakfast, and has for a couple of years now. He loves it, and I feel better knowing that he has some protein in his tummy instead of just all that sugar!!

    face it the girl loves spice nothing bland. I love homemade pot pie so much better than boxed.

  10. Peanut butter on pancakes is a staple around here. I find the pancakes “stick to the ribs” longer that way.

    Going to look for your pot pie recipe now. I’m looking for an easy one to replace my usual recipe w/bisquick…

    We love pot pie at our house! When we usually make the crust (not wheat) I use some lard. Not too much about a small half to a quarter of what the recipe calls for in crisco. Hope that helps! I always hate it when the crust sticks to the countertop!!!

    Cook’s Illustrated swears that replacing half of the water called for in the pie crust with vodka will make it smooth and easy to roll. I tried it and it worked OK. (The alcohol cooks out.) But then I had some vodka leftover because I don’t drink. I stuck a vanilla bean in it and made homemade vanilla extract. Hope your pie crust works better next time! (Oh, and I had a college roommate who always put peanut butter on her pancakes too.)

    After a million and one fails trying to make pie crust I finally resorted to using biscuit dough. Gasp! My family loves it – maybe just because the dish is now finally edible?!?

    Ohhh I feel your pain with the turkey broth – it just happened to me last night with chicken broth! Now our house absolutely reeks. I have no idea how to get the smell out!
