It is no secret that I love butter. A few years ago I stopped using margarine and started using butter exclusively. I am thankful that the commissary prices are reasonable because I buy eight pounds of butter a month! I use it in most of my recipes! From pasta to pancakes it is one of my cooking staples.

I was thrilled when Challenge Butter contacted me and asked if I wanted to give some butter to my readers! For those of you who are still using margarine, please enter this giveaway so you have a chance to taste the difference.

This potato soup recipe is a great way to use up those Thanksgiving/ Christmas leftovers, and one of my many recipes in which butter makes it better. It makes a great meal or side dish.

Mel’s Potato Soup
  • 5 pounds of potatoes, peeled and quartered (if you are using red potatoes you can keep the skin on if you like potato skin in your soup).
  • 1 onion diced
  • 1 Stick of butter
  • Chopped ham
  • Salt, Pepper, Garlic to taste
  • Milk

Boil potatoes and onion for about twenty minutes.

Drain (but save the water)

Put the potatoes and onion back on the stove top and add about 2 cups of the potato water back into the pot

Add 1 stick of butter

Mash the potatoes to the desired consistency. The more you mash the smoother the soup will be.

Add chopped ham and salt, pepper, and garlic to taste.

Then add milk, until you reach the desired consistency.

Cook on the stove for about 10 minutes and then serve.

Garnish with cheese.

Don’t throw away the extra potato water, use it instead of water to bake your next loaf of bread. Your loaf will be amazing!

This is not the bread pictured with the soup, this is our potato bread for French toast.

The bread pictured with the soup is whole wheat rosemary asiago bread.

You can modify this recipe to use your leftover mashed potatoes from Thanksgiving. Adjust the amount of potatoes based on how much mashed potatoes you have leftover. Add them when you are mashing the cooked potatoes.

I wish we could use butter, do you know how much easier my life would be if my son could have butter. He can’t have any casien which is the milk protein in butter. We do however use a lot of clarified butter. It can be a bit of a hassle to make it so I usually shell out the extra money and buy it.

Butter is WAY better than margarine any day of the week. My butt and thighs beg to differ with me, but I’m sticking to my guns on this one! ;)

I grew up on margarine and for about half our married life we used margarine. Then I found out about the health benefits of butter over margarine and I can’t ever go back. Not to mention how much better butter tastes than margarine. I love potato soup, too. This one looks really good.

I am a butter lover. Yes, it is more fattening, but I think it’s way better for a person than margarine and all it’s artificial junk. I think I’ll make that potato soup. I’ve got lots of left over ham from a pre-Thanksgiving get-together! I’m going to have to try that potato bread too, and spread a large dollop of butter on it!

We switched to butter after we learned that butter (in moderation) is actually healthier than margerine, and after trying and being dissapointed with the so-called “heart smart” margerines that seem to disintegrate to make watery, soggy tasteless toast! I have yet to make potato soup, but want to try your recipe. Your bread made with potato water looks wonderful . jgs0925 at gmail dot com

I grew up on margarine, and I still use it. I wonder if the butter would taste better in the family recipes? Or, if everything will taste a little off? I’m willing to try.

Oh, there is nothing in this world like cooking with Butter. Whatever did someone come along and create margarine for, anyway? I mean, I know why, but… WHY?!?

I grew up on a dairy farm but never really used butter much – it was too expensive for my family’s budget. Then I grew up and kept using margarine. I’ve recently switched to healthy fats, including butter. They make fried eggs taste so much better too, among other things! :) Thanks for this post.

I agree BUTTER IS BETTER! Mostly because it is REAL, not like margarine. If you are having trouble substituting butter for your margarine recipes, especially when baking, find NEW recipes… trust me I’ve been down that road. There is a lot of science behind it.

Every now and then I go into my kitchen to try and find something that I can put butter on. Maybe I should just skip to the chase and eat the butter straight!

You are so right about the great price for this butter at the commissary. I made the switch about 2 years ago. I really like Challenge butter. I especially like the size of the sticks!!! Your soup recipe sounds great also. I will have to give that a try as well.

I love butter! I use at least a pound a week.

I have to admit, I use margarine. There are a few recipes I use only butter in for the richness, but haven’t really considered making a everyday switch. Coupons always help, though!

Butter is better cuz margarine is one molecule from being close to plastic. Learned that from a girlfriend whose mom had heart surgery. Dr. told her to quit eating butter. I enjoy butter in recipes especially the cookies I make 2x a month and in my homemade soups. Never tried Challenge Butter before. I’m sure it’s good!! :0)

I love butter, but usually only use it on special occasions. I would love to use it every day.

I grew up with margarine, switched to butter when times were better but sadly back to margarine. I would love to be tempted back to butter again especially since it is healthier.

We switched to butter and LOVE it! I will pay more for the taste and the health, but coupons are great! I use Challenge Butter whenever I can get it on sale.

I was raised with margarine, Cool Whip, and Miracle Whip. I married into a butter, whipped cream, and mayonnaise family. It took a bit to make the switch, but now I don’t like to go back! Thanks for the giveaway, and thanks for the recipe. We love potatoes and it sounds like an easy recipe.

I grew up with mostly margarine for daily use, butter reserved for baking but I recently decided to switch to using mostly butter. I keep a small container of margarine in the fridge for my mother who won’t have the butter on toast and for days when we can’t quite make it to the grocery. I use a ceramic butter keeper that keeps our butter at a wonderful spreadable consistency.

@ Purple Moose – I too grew up on Miracle Whip but I just can’t make the transition to only mayonnaise. Like with butter, I still use both. I love the Tangy Zip!

Butter is healthier than margarine, too unless there’s a specific reason you shouldn’t be eating butter.
