I am thankful that the commissary prices are reasonable because I buy eight pounds of butter a month! I use it in most of my recipes! From pasta to pancakes it is one of my cooking staples.

This potato soup recipe is a great way to use up those Thanksgiving/ Christmas leftovers, and one of my many recipes in which butter makes it better. It makes a great meal or side dish.
- 5 pounds of potatoes, peeled and quartered (if you are using red potatoes you can keep the skin on if you like potato skin in your soup).
- 1 onion diced
- 1 Stick of butter
- Chopped ham
- Salt, Pepper, Garlic to taste
- Milk
Boil potatoes and onion for about twenty minutes.
Drain (but save the water)
Put the potatoes and onion back on the stove top and add about 2 cups of the potato water back into the pot
Add 1 stick of butter
Mash the potatoes to the desired consistency. The more you mash the smoother the soup will be.
Add chopped ham and salt, pepper, and garlic to taste.
Then add milk, until you reach the desired consistency.
Cook on the stove for about 10 minutes and then serve.
Garnish with cheese.
Don’t throw away the extra potato water, use it instead of water to bake your next loaf of bread. Your loaf will be amazing!

The bread pictured with the soup is whole wheat rosemary asiago bread.
You can modify this recipe to use your leftover mashed potatoes from Thanksgiving. Adjust the amount of potatoes based on how much mashed potatoes you have leftover. Add them when you are mashing the cooked potatoes.

I use margarine but would like to switch to butter. I don’t know if the kids would mind?
We made the switch from margarine to butter a couple of years ago. You are correct that everything tastes better with butter. Our kids noticed that things tasted better. I do soften a little and add some olive oil to what we will be using for sliced bread so that we can get a healthy oil in.
I have been trying to make the switch but my budget is a problem. I would love some coupons!!

I have to admit I still buy a tub margarine for spreading on toasts to make it easier for the kids, but for cooking I love butter.
I only use butter! I have noticed a huge difference in taste. My friends all want the secret to my cookies. I tell them use BUTTER!!
I too keep around the marg, but only for toast spreading. But baking with butter is the tastiest.

I switched to butter only within the past 2 yrs.
I didn’t use to think that butter made economic sense until I read that most people over-compensate with margarine to acquire the same tastiness as butter….negating fat, calories, & savings issues.
I purchase between 4 to 8 lbs of butter monthly too (depends on what I’m baking). I try to stock up when it’s on BOGO. I recently bought a high-priced brand for $1.50 a lb. That’s comparable to buying a high-priced brand of margarine. I usually find it on sale at least once a month…especially during a holiday season…whether it be Christmas or Easter or 4th of July.
But sadly, I have not heard of Challenge Butter (have not seen it at any local stores). It seems to be available in the Western-US only. But there is a coupon on their Where to Buy page for anyone in their retail area.
I love Challenge butter! I but it at our commissary because it’s the best-priced butter there!
I love butter! My hubby prefers margarine, but I’m hoping to convince him that butter is better! I’m starting to sneak it into my cooking and drop hints that I used butter instead of margarine.
I “heart” butter!
We use butter for everything – I’ve tried Challenge butter before and can taste the difference in the mashed potatoes, they’re so creamy. I very rarely buy Challenge butter though because I am just so used to Land O’ Lakes that I don’t think about it. I hardly ever see coupons for the butter sticks but will stock up when they go on sale at the commissary or grocery stores, butter freezes very well and I’ve always got a few boxes stored.
My husband and I just love butter! It’s a must-have when you’re baking!

I LOVE using butter! I made the switch from margarine a couple of years ago and never looked back. Just recently my husband finally convinced me to switch from unsalted to salted butter and, WOW, what a difference! The only time I don’t use butter is in certain cookies, biscuits, and pie crust because I find that butter-flavored shortening makes those few items a little crisper and flaky – but that’s just a personal choice, real butter still rules my kitchen!

I love real butter, and try to only by the real stuff. I definitely notice the difference when I do use margarin.
I only use butter too and I’m also thankful for the commissary prices on it!! Don’t know what I’ll do when we transition to civilian life next year and I lose the commissary!!

I love butter, dont use anything else for baking. occasionally ill buy the non-dairy stuff for toast but cant imagine using that for cooking. this would really come in handy with all the baking im doing for the holidays

I was visiting a friend this last week and we made chocolate chip cookies. She only had margarine. Imagine my disappointment. Especially when the cookies tasted like crap. Reaffirmed my butter commitment.

I grew up in a family who used margarine, it was just another cost savings that my mom used. When I met my mother-in-law, who was a wonderful cook, I learned the joy of butter. I have not purchased margarine for anything since then and I love it. It gives an extra dimension to the food, and when you think about it, butter is better for you than margarine. Go Butter!
I MUCH prefer real butter to margarine and use it for serious cooking. I really believe that our bodies don’t really know what to do with margarine since it’s not a natural food product. Although butter has fat, it’s much better (and tastier) than something man-made any day of the week.
I would love to try butter, I have never really tried real butter. I heard it is better for you as also, so I would love to try it.

Butter people here. I do use organic smart balance to butter my bread but other wise it’s butter all the way.

Mmmmm, butter. I come from a family of butter snobs–they will not under any circumstances use margarine, and it’s funny, my grandma makes an incredible, incredible, incredible English toffee that none of us have ever been able to successfully replicate and she swears the secret is Challenge butter.
