BBQ Pork in a Crock Pot

Ingredients

1 boneless pork roast

1 cup Worcestershire sauce

1 cup brown sugar

Spray crock pot with non stick spray. Add pork roast. Add worcestershire sauce and brown sugar. Cook on high for 1 hour, then on low for 5 hours. Pork roast is finished when it falls apart. I use a fork to shred the roast and serve on whole wheat rolls.

Note: If using a very large roast, add more worcestershire sauce and brown sugar.

An afternoon meeting ran late and dinner plans changed, at 5:45 pm my kids were hungry, cranky, and begging for dinner. I threw this inexpensive nacho bake together in about 45 minutes from start to finish. Get creative with this easy dish and use whatever ingredients you have in your pantry or freezer. Corn, salsa, or black beans would work well in this dish too.

Nacho Bake

1 lb ground beef

1 packet taco seasoning (or make your own)

2 cups refried beans

8 soft corn tortillas

1 can kidney beans, drained (or substitute with black beans)

1 1/2 cup shredded cheese

Tortilla chips

Brown ground beef. Add seasoning mix, 3/4 cup of water, and kidney beans and cook for 15 minutes.

In a 9 x 13 pan (spray with nonstick) layer: corn tortillas, refried beans, the meat and bean mixture, then cheese. Repeat. Add tortilla chips to the top.

Bake in a 350 degree oven for 15 minutes then serve. We served the nacho bake with sour cream on the side.

The secret to pizza parlor breadsticks is cornmeal and butter, lots of butter.

Ingredients

Breadsticks

1 1/3 cups warm water

3 tablespoons olive oil

4 cups flour ( I used whole wheat)

Topping

1/2 cup melted butter

Garlic Powder

Parmesan Cheese

Salt

Mix together olive oil, yeast, salt, oregano, powdered milk, and warm water. Add in flour. Knead for 5 minutes. Cover dough and let rise until doubled.

Punch down dough and roll out into a rectangle. To get that pizza parlor taste use cornmeal instead of flour to roll the dough. Place dough on a greased cookie sheet. Push or roll the dough so it fills the entire cookie sheet. With a knife or pizza cutter slice the dough into one inch strips. Don’t cut all the way through the dough, only about half-way through.

I used a 9 x 13 pan, I do not recommend using one because the breadsticks are really thick. A cookie sheet creates the perfect sized breadsticks.

Let rise for 30 -45 minutes.

Mix together melted butter, garlic powder and Parmesan cheese. Brush the mixture on top of the breadsticks, then sprinkle a pinch of salt. Bake at 350 degrees for 20 minutes or until the top turns golden brown.

Spaghetti Pie

Ingredients

1 box spaghetti noodles boiled and drained ($0.50 on sale plus coupon)

1 pound browned ground beef or turkey ($0.99 turkey at either Aldi or Commissary)

1 jar spaghetti sauce ( $1 purchased in bulk)

garlic powder, minced onion, pepper ($0.25)

1/3 cup Parmesan cheese ($0.50 Cooper brand at Commissary)

1/2 cup mozzarella cheese ($.50 on sale at Commissary w/ Kraft printable coupon)

Brown meat and boil noodles. In a large pot mix together all the ingredients except the mozzarella cheese. Pour spaghetti mixture into a 9×13 baking dish. Bake covered at 350 degrees for 20 minutes. Add mozzarella cheese and bake another 5 minutes uncovered. If you are freezing this dish let it thaw completely before baking and add about 10 to 15 minutes to the baking time.

Total cost $3.74

This meal serves eight and was a big hit with the kids. Even my non-spaghetti sauce kids liked it!

I beat the eggs first, then take all the ingredients and mix together in a bowl. You might need to adjust the amount of bread crumbs a little to make sure you can form the patties.

Form the mixture into eight patties (similar to hamburgers)

On medium heat coat a frying pan with vegetable oil, then melt 2 tablespoons of butter in the pan.

Set on a paper towel to blot any extra oil.
