Egg Casserole in Muffin Cups

This egg casserole is a great and easy breakfast that is sure to please your family or a crowd. You can make the mixture the night before and bake in the morning to save time. This recipe is from my sister-in-law, Amy, who blogs at Mom’s Toolbox.

Egg Casserole in Muffin Cups

Ingredients

  • 12 slices of bacon cooked and cut into thirds
  • 6 eggs
  • 1/2 cup shredded jack cheese
  • 1/2 cup half and half
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of pepper
  • 1/4 teaspoon Italian seasoning
  • extra cheese for the top

Spray muffin tin with nonstick cooking spray. Place 3 bacon pieces in the bottom of each muffin cup. In a bowl, mix together all the ingredients except the extra cheese until well blended. Fill each muffin cup with 1/4 cup egg mixture. Sprinkle extra cheese on top.

Bake for 20 to 25 minutes @350 degrees or until eggs are set.

Bull’s Eyes

This twist on egg and toast makes a great breakfast, lunch or snack. Healthy (if you are using whole grain bread) and full of protein, this recipe works great with somewhat stale bread.

Please excuse the pictures, I am not sure what I was thinking using the patterned plate!

Bull’s Eyes

Ingredients

  • Bread
  • Egg
  • Butter

Melt butter in hot skillet or griddle.
Cut a circle out of the center of the bread.

Place bread on the skillet. Crack egg in the center of the circle.

Cook for 1 to 2 minutes. Flip and cook an additional minute. You can toast your circle cut out on the skillet too.

Whole Wheat Pancakes

Whole Wheat Pancakes

These delicious and fluffy pancakes can be made with 100% whole wheat flour. I used 3 cups ground kamut and 1 cup soft white wheat.

Fluffy Whole Wheat Pancakes

Ingredients

  • 3 cups buttermilk
  • 4 eggs
  • 1/2 cup butter, melted
  • 1/2 cup white sugar
  • 1 tablespoon and 1 teaspoon baking powder
  • 2 teaspoons baking soda
  • 2 teaspoons salt
  • 4  cups whole wheat flour

Mix all the liquid ingredients, beat for one minute on high. Mix in sugar, baking powder, baking soda, and salt. Slowly mix in flour until batter is smooth but thick.

Cook on a hot (350 degree) buttered griddle.

This recipe makes enough pancakes for a family of nine. If you aren’t feeding a baseball team, freeze the extra pancakes.

Granola

Granola

  • 3 cups dry oatmeal
  • 1/2 cup butter
  • 1/2 cup honey
  • 1/4 teaspoon salt
  • 1/2 cup wheat germ

First melt the butter in a 3-quart saucepan over medium heat. Add the honey and salt and briefly heat with the butter. Turn off the heat and add the oatmeal and wheat germ. Stir. Pour the mixture onto a cookie sheet. Spread the mixture out evenly and bake it at 375° for 10 minutes. It will be a golden brown color. Remove from the oven and let cool. Store in an airtight container.
